Maleficent Cupcakes
*makes 12

Ingredients:

1 dozen pre-baked cupcakes (dark chocolate or devil's food)
1 (12 ounce) bag semi-sweet (or dark chocolate) chips
1/2 cup butter, softened to room temperature
1 cup all-vegetable shortening
1 teaspoon vanilla extract
6 cups powdered sugar
4-6 tablespoons milk
purple and green food coloring (I used gel food coloring to achieve these bold colors)
colored sprinkles

Tools:

black, purple or green cupcake liners
1 gallon-size Ziploc bag
wax paper
2 cake decorating bags (or gallon-size Ziploc bags)

Directions:

Bake cupcakes according to package (or recipe) directions. Let cool completely, preferably overnight.

Pour chocolate chips into a microwave-safe bowl and heat on low in 1-minute increments, stirring well after each, until completely melted (or melt in a saucepan over low heat).

Line a cookie sheet or cutting board with wax paper.

Pour melted chocolate into one of the Ziploc bags. Cut off the tip of one corner. Twist the excess bag to form a decorating bag (watch the video above to see how this is done).

Squeeze the chocolate onto the wax paper into the shape of Maleficent's horns. You'll need 2 for each cupcake. When finished, place the entire sheet into your freezer to harden.

Now, let's make the buttercream frosting. Place the softened butter and shortening into a large mixing bowl. Add the vanilla. Mix well until creamy. Add the powdered sugar, 1 cup at a time, mixing well after each addition. After all 6 cups have been added the frosting will be thick and crumbly. Pour in the milk and mix well until the frosting is light and whipped.

Divide frosting and spoon into 2 bowls. Add the green food coloring to one bowl and the purple to the other. Mix them well with spatulas. Now spoon them into your 2 cake decorating or Ziploc bags.

Take one cupcake and set it on a plate. Squeeze the purple frosting around the top edge to make a border. When the ends meet, continue swirling to fill in the center.

Now take the green frosting bag. Place it 1/4" edge of purple and begin swirling around while building up the center to form a peak.

Take the chocolate horns from the freezer and place one on each side of the green frosting, pushing them down in the cake to secure. Now sprinkle the top with your colored sprinkles. That's it! Now it's time to take a bite!!

Maleficent approves of the design!

1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons apple cider vinegar
salt & pepper, to taste

Directions:

Place cole slaw blend into a large bowl. Add mayo, sour cream, apple cider vinegar, and seasonings. Mix well with a large spoon. Set in fridge to chill for 30 minutes.

Horseradish Cream Ingredients:
*makes 3/4 cup

1/2 cup sour cream
1/4 cup prepared horseradish

Directions:

Stir ingredients together in a small bowl. Place in fridge until ready to use.

Sandwich Ingredients:
*makes 1 sandwich

1 (round) loaf focaccia bread
horseradish cream
1 slice Swiss cheese, cut into 2 triangles

Cut the focaccia bread loaf down the center. Turn the loaf 90 degrees and now cut it down the center again. (Watch the video above to see how this is done.) You should now have 4 triangles. Take one of the triangles and cut it horizontally through the middle. You should now have a top and bottom bread/bun.

Chili "CONE" Queso Recipe
*makes 6

Ingredients:

6 waffle cones
heavy-duty aluminum foil
non-stick cooking spray
1 (11 ounce) tube refrigerated French bread loaf
2 cans chili (with or without beans)
1 cup shredded cheddar cheese
corn chips

Directions:

Preheat oven to 350 degrees.

Carefully cover each waffle cone with a layer of aluminum foil. Spray outsides with non-stick cooking spray. Set aside.

Open tube of bread dough. You should have a long roll. Cut it into 6 even pieces with a pizza cutter or sharp knife. Take one lump of dough and place it on a flat, clean surface. Roll it back and forth with hands until you have a long, thin snake. Continue to do this until it measures 36-inches. (Watch the video above to see how this is done.)

Take the strip of dough and begin wrapping it around the foil-covered cone, starting at the bottom and working your way up. Press the end into a lower layer to seal. Set this on a baking sheet lined with parchment paper. Do this for the remaining lumps of dough and cones.

Place the cones into a preheated oven and bake for 15-20 minutes at 350 degrees (F) until golden brown.

While the cones are baking, pour the cans of chili into a saucepan and heat on medium-high heat.

Remove the cones from the oven and set them on the counter for a few minutes until they are cool enough to touch. Carefully slide the foil-lined ice cream cones out of the bread cones. Stand them upright in narrow glasses to fill.

Sprinkle a bit of cheddar cheese into the bottom of each bread cone. Now spoon the chili in. Top with corn chips and another sprinkle of cheese. Serve immediately. Enjoy!!
