Picnic Burger
*serves 1

Ingredients:

1 Angus Beef patty, fresh or frozen
2 all-beef franks
1/3 cup sliced onions
1 kaiser roll
sauerkraut (optional)
mustard
ketchup
salt and pepper
non-stick cooking spray

Directions:

Spray griddle, grill or skillet with non-stick cooking spray. Season patty with non-stick cooking spray and cook until browned and no longer pink inside.

Spray onions with non-stick cooking spray and saute until caramelized and tender.

Cut each frank down the middle of the long side, being careful not to cut them all the way in half. Leave them attached so they open up like a book. Place both franks cut-sides down on the griddle or pan. Cook until there are brown marks.

Cut kaiser roll in half. Spray cut sides with non-stick cooking spray and place face down on griddle or pan until crisp and golden-brown.

Assembly:

Place the bottom bun face up on serving plate.

Top with hot dogs, cut sides facing up.

Add a layer of sauerkraut (optional).

Place cooked beef patty on top.

Drizzle mustard and ketchup.

Add a layer of grilled onions.

Place the other half of bun on top.

Insert a skewer or toothpick down the center of the burger.

Stick a dill pickle spear on top.

Serve with a side of French fries or potato chips.

coarse salt, to taste

Monte Cristo Recipe from Blue Bayou/Cafe Orleans (Disneyland)

Monte Cristo Sandwich
*serves 4

Batter Ingredients:

1 3/4 cups + 2 tablespoons water
1 whole egg
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt

Directions:

In a large bowl, whisk water and egg. Add in flour, baking powder and salt. Whisk until you have a smooth batter. Set aside.

Sandwich Ingredients:

1 loaf of braided Challah Bread (I found it at Central Market)
8 slices deli ham
8 slices deli turkey
8 slices Swiss cheese
Canola oil
powdered sugar
raspberry or blackberry preserves

Directions:

Cut 8 slices of Challah Bread (1/2-inch thick). Layer 2 slices of ham on top of one slice of bread. Top with two slices of turkey and two slices of cheese. Place second slice of bread on top. Assemble other 3 sandwiches. With a serrated knife, slice down the center of the sandwich. Do this for the remaining sandwiches. You should now have 8 halves.

Pour oil into a deep pan and heat until 365(F) degrees. If the oil is smoking, it is too hot.

Dip the sandwich half into the batter, coating all sides, and then place into the hot oil. Let cook for 3 minutes on each side until golden brown. Remove and place on a paper towel-lined plate to drain. Do this for all sandwiches.

Taking your knife, cut each fried sandwich in half again. You should now have 16 little sandwiches. Place 4 of these on each plate. Sprinkle with powdered sugar and serve with a side of raspberry or blackberry preserves for dipping.
