Berry Croissant Pudding from Sunshine Seasons (Epcot)

Buttery croissants, cream and berries combine to make
this delicious twist on bread pudding.

BERRY CROISSANT PUDDING

Ingredients:

10-12 pre-baked croissants
2 whole eggs
12 ounces heavy whipping cream
1/3 cup sugar
1 teaspoon vanilla
1 1/2 cups blueberries, fresh or frozen (If frozen, thaw first.)



Directions:

Preheat oven to 350-degrees (F).

Spray a 9x13" baking dish (or cake pan) with non-stick cooking spray. Using kitchen scissors or a knife, cut the croissants into 1-inch chunks. Spread them evenly in pan. Set aside.

In a large bowl, whisk eggs. Pour in whipping cream and stir well. Add sugar and vanilla. Stir again. Mix in blueberries.

Pour blueberry/cream mixture evenly over croissants. Cover with a sheet of aluminum foil. Place in preheated oven and bake at 350 degrees for 40 minutes.

Remove foil and return to oven for an additional 10 minutes until golden brown. Serve with ice cream or topped with whipped cream. Enjoy!!

Frunch Juice Recipe from Boma (Disney's Animal Kingdom Lodge)

The flavors of pineapple, orange and mango
blend with other citrus juices to make this sweet beverage
called "Frunch" from Boma at Disney's Animal Kingdom Lodge.

Frunch Juice
*makes about 8 cups


Ingredients:

3 cups cold water
2 cups orange juice
1 1/2 cups mango juice (I found cans of it in the Mexican food aisle of my local grocery store)
1/2 cup frozen pineapple juice (from concentrate), thawed
1/2 cup frozen lemonade (from concentrate), thawed
4 tablespoons grenadine (found in the alcohol aisle, near drink mixers)


Directions:

Pour cold water in a large pitcher. Add in all of the juices and grenadine. Stir well. Set in fridge to chill for 1 hour. Serve cold.

Mocha Cake Cups Recipe from Chesire Cafe (Magic Kingdom)

Layers of moist chocolate cake
are separated by whipped mocha buttercream
and then topped with sprinkles and hazelnut wafer cookies
in this easy-to-make recipe from
Chesire Cafe at Disney's Magic Kingdom.

Mocha Cake Cups
*makes 10

Cupcake Ingredients:

1 chocolate cake mix (or your own personal recipe)
water (as indicated on package)
oil (as indicated on package)
eggs (as indicated on package)

Directions:

Mix according to directions on back of box (or recipe). Pour into cupcake pan and bake. Let cool overnight.

When cool, cut each cupcake in half horizontally. Set aside.


Mocha Buttercream Ingredients:


1/2 cup butter, softened to room temperature
1 cup all-vegetable shortening
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
4 cups powdered sugar
1/4 cup cold coffee
chocolate sprinkles (optional)
hazelnut wafer cookie rolls (optional)


Directions:

Brew a cup of coffee and set aside to cool.

Place butter, shortening and vanilla in a large bowl and mix with an electric mixer on high until creamy. Add in cocoa and blend well. Add powdered sugar, 1 cup at a time, mixing well after each addition. The mixture will be thick and crumbly. Pour in cold coffee and mix on high speed until it reaches a light, whipped consistency. 

Spoon frosting into a cake decorating bag fitted with a star tip (or gallon-size baggie with the corner cut off). 

Set half of a cupcake into the bottom of a clear punch cup. Squeeze a swirl of frosting on top, filling in the middle (watch the video above to see how this is done). Set another cupcake half on top and add another layer of frosting. Add a third layer of cupcake and finish off by swirling a mound of frosting on top. 


Top with chocolate sprinkles. Now stick 2 hazelnut wafer cookies into the cake cup. That's it!

by following this easy recipe.

GOURMET CAKE CUPS FROM CHESIRE CAFE
*makes 10

Cupcake Ingredients:

1 box confetti cake mix (or your favorite cake mix flavor)
water (as indicated on package)
oil (as indicated on package)
eggs (as indicated on package)


Directions:

Mix and bake cupcakes as directed on package. Do this the evening before. Let cool overnight. Carefully remove the paper cupcake liners (if you used them) the following day. Take a serrated knife and cut each cupcake in half (watch the video above to see how this is done). Set aside.



Buttercream Frosting Ingredients:

1/2 cup butter, softened to room temperature
1 cup all-vegetable shortening
1 teaspoon vanilla extract or your choice of flavoring
2 lbs. (about 7 cups) powdered sugar
6 tablespoons milk
food coloring (optional)
sprinkles (optional)
clear punch cups, for serving (you can find these at dollar stores, grocery stores or party stores)


Directions:


Place butter and shortening into a large bowl. Add in vanilla or other flavoring. Beat with an electric mixer until creamy. Pour in 1 cup of the powdered sugar at a time, blending well after each addition. After all 7 cups of powdered sugar have been added, the mixture will be crumbly and hard to mix. Add in the milk and blend again until the frosting has a nice whipped consistency. Add in food coloring and blend well (optional.

Spoon the frosting into a cake decorating bag fitted with a star tip. If you don't have these items, you can simply spoon it into a gallon-size plastic baggie and cut off one of the corners. Twist the back end of the bag and squeeze the frosting towards the open end for a homemade decorating bag.

Take one of the cut cupcake halves and place it into the bottom of a clear punch cup. Pipe a layer of frosting on top of it. Take a second cupcake half and set it on top of the frosting layer. Now add another layer of frosting. Add a third layer of cupcake and finish off the final layer with a heap of frosting, swirling at the top to make a peak. Immediately add the sprinkles (optional).
