Disney Princess Cupcakes
*makes 1 dozen
12 standard-size cupcakes (baked and cooled)
1/2 cup unsalted butter
1 cup all-vegetable shortening
1 teaspoon vanilla extract (or other flavoring)
5 cups powdered/confectioner's sugar
4-6 tablespoons milk
food coloring (yellow, blue and red or pink)
small edible icing flowers
small plastic Disney Princess figurines (I found mine at the 99 Cents Store)
Bake cupcakes according to directions on package or recipe. Let cool completely. Set aside for later.
Place butter, shortening and vanilla in a large mixing bowl and beat with an electric mixer until creamy. Add in powdered sugar, 1 cup at a time, mixing well after each addition. After all 5 cups of sugar have been added, the frosting will be thick and crumbly. Now it's time to add the milk. Add 1 tablespoons at a time and mix on high until light and creamy.
Separate the frosting into 4 bowls for coloring. I only colored 3 of mine and left 1 white (see the video above) but you are welcome to color all 4. Add drops of food coloring into each bowl and mix with a spoon or spatula until you reach the desired shade.
Spoon each color of frosting into a gallon-size Ziploc bag and cut off 1/2-inch from one end to create a homemade cake decorating bag (watch the video above to see how this is done).
Take a cupcake and begin squeezing the frosting around the edge in a circular motion, then fill in the middle.
Sprinkle with edible glitter. Carefully set a Disney Princess figure in the center of the frosting and gently press down to secure. Add a few edible flowers around the toy's base.
Repeat these steps for the remaining cupcakes.
