Homemade cole slaw and roast beef are piled high
between thick slices of focaccia bread in this
easy-to-make sandwich from

Cole Slaw Ingredients
*makes 8 ounces
8 ounces cole slaw blend or shredded cabbage
1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons apple cider vinegar
salt & pepper, to taste
Place cole slaw blend into a large bowl. Add mayo, sour cream, apple cider vinegar, and seasonings. Mix well with a large spoon. Set in fridge to chill for 30 minutes.
Horseradish Cream Ingredients:
*makes 3/4 cup
1/2 cup sour cream
1/4 cup prepared horseradish
Stir ingredients together in a small bowl. Place in fridge until ready to use.
*makes 1 sandwich
1 (round) loaf focaccia bread
1 slice Swiss cheese, cut into 2 triangles
5 ounces thinly-sliced roast beef
Cut the focaccia bread loaf down the center. Turn the loaf 90 degrees and now cut it down the center again. (Watch the video above to see how this is done.) You should now have 4 triangles. Take one of the triangles and cut it horizontally through the middle. You should now have a top and bottom bread/bun.
Spread a layer of horseradish cream on the cut sides of both slices of bread. Place the Swiss cheese on the bottom bread. Top with the roast beef. Add a generous helping of cole slaw. Top with a handful of arugula. Set the second bread on top. Serve with pickle spears and a side of your favorite flavor of potato chips.
