Pepper Pot Pork
2 1/2 lb. boneless pork tenderloin
1 cup soy sauce
1 tablespoon light brown sugar
1/4 teaspoon ground black pepper
1/2 teaspoon Kosher salt
Place tenderloin into gallon-size freezer bag. Pour in soy sauce. Add brown sugar, pepper and salt. Squeeze out excess air and seal baggie. Gently mix ingredients with hands from outside bag (watch above video to see how this is done). Place in fridge to marinate for 2-3 hours.
Preheat oven to 350(F) degrees.
Remove tenderloin from baggie and place into roasting pan. Bake in oven for 1 hour at 350(F) degrees until internal temperature reaches 145(F) degrees. Remove from oven and let rest on counter for 10 minutes. Slice into 1/2-inch thick medallions and serve with a side of rice or couscous. Don't forget to top it off with the sauce (recipe below).
1/4 cup soy sauce
1 cup canned chicken broth
1 cup canned beef broth
1 tablespoon granulated sugar
dash of cayenne pepper
1/4 teaspoon ground ginger
2 tablespoons cornstarch
1/2 cup water
1 green bell pepper, thinly sliced
1/2 yellow onion, thinly sliced
Pour the soy sauce, chicken and beef broths into a medium-size saucepan. Add sugar, cayenne and ginger. Stir well. Bring to a boil and then reduce heat to low.
In a small cup or bowl, mix water with cornstarch to create a thickening agent. Add this mixture to the sauce. Whisk until it becomes a medium-thick consistency.
Stir in the bell pepper and onion slices. Cook on low for 5-7 minutes until vegetables are tender.
Pour generously over your pork medallions and rice/couscous. Enjoy!!
