"Frozen" Inspired Cupcakes with Snowball Centers

Moist, blue velvet cake is topped with
fluffy, marshmallow buttercream
to make these cut cupcakes
inspired by Disney's "Frozen".
Each cupcake also has a surprise
snowball (candy) center adding to the magic.

"Frozen" Cupcakes
*makes 16 standard-size cupcakes

Ingredients:

16 blue cupcakes (baked and cooled)
blue and white edible pearls (assorted sizes)
blue and white sugar sprinkles


Directions:

Mix blue velvet cake mix according to package directions (or make a white cake mix and add blue food coloring until you reach the desired color). Pour into cupcake pan with paper or foil liners. Bake according to time indicated on cake mix box. Remove from oven and let cool completely, preferably overnight.


Marshmallow Buttercream

Ingredients:

1/2 cup unsalted butter, softened to room temperature
1 tub marshmallow cream/fluff (about 7-8 ounces)
1 teaspoon vanilla extract (OR mint extract if you want icing to have a cool, minty flavor)
4 cups powdered sugar
4-6 tablespoons milk

Directions:

Cream butter, marshmallow cream and vanilla together with electric mixer. Add powdered sugar, 1 cup at a time, mixing well after each. Frosting will be thick and crumbly. Add milk, 1 tablespoon at a time until frosting is light and fluffy. Fill a cake decorating bag with icing -OR- fill a gallon-size baggie with icing and cut off tip of one corner. Squeeze icing into the cut corner and twist to create a homemade decorating bag.


Assembly:

Insert a small, sharp knife 1/2 inch away from the edge of the cooled cupcake. Cut a circle 1 1/2-inches deep out of the center of the cupcake. Remove the divot. (Watch the above video to see how this is done.) Set the piece aside. Fill the hole with an assortment of edible pearls. Replace the divot on top of the hole upside-down, with the point facing upward.

Starting at the outside edge of the cupcake, squeeze icing bag in a circle around the divot, building up until the peak is completely covered. 

Immediately place a large edible pearl on top of the peak and gently press down. Now sprinkle with an assortment of colored sugar sprinkles. That's it!!
