Easter Egg Rice Treats

Rice Krispy Treats Ingredients:
*makes 1 (9x13") sheet

3 tablespoons butter
40 large marshmallows
6 cups rice cereal

Directions:

Place butter into a large pot and heat on medium-high until melted. Add in marshmallows and continue to stir until they're completely melted and there are no more lumps. Remove from heat. Stir in rice cereal, 1 cup at a time.

Grease a 9x13" casserole dish or cake pan. Also, grease or spray a rubber spatula. Pour the rice mixture into the dish and spread with the greased spatula, smoothing the top. Set in a cool place to harden or set in fridge for 20 minutes.

Easter Egg Ingredients:
*makes 8-12 (depending on size and shape of cookie cutters)

Ingredients:

egg or bunny-shaped cookie cutters
1 lb. vanilla almond bark or Wilton Candy Melts
Easter-themed (or pastel) sprinkles
assorted tubes of cake decorator icing and tips (I used a Wilton star tip #18)

Directions:

Turn out sheet of rice krispies onto a clean surface or wax paper. Cut out shapes using cookie cutters. Set aside.

Place almond bark/candy melts in a microwave-safe container and heat in microwave at 50% or low power in 30 second increments until completely melted. Stir well.

Take a rice treat and dip the top-side only into the melted candy coating. Set on wax paper. (Watch the above video to see how this is done.) Immediately dust with sprinkles. Do this for all treats. Let cool completely. You can set them in fridge or freezer for a few minutes to speed up this process.

Draw lines, swags or dots onto the hardened eggs with the tubes of decorator icing. The kids can help with this part. Display on a platter with edible Easter grass (recipe below).

Easter Grass:

Ingredients:

1 (7 ounce) bag sweetened coconut flakes
4 drops green food coloring
1 gallon-size freezer/plastic bag

Directions:

Dump coconut into freezer bag. Add drops of food coloring. Seal bag and shake until coconut is coated. You can add more food coloring if you'd like the grass to be a darker shade of green. Pour out onto your serving platter.
