Chicken Fingers Recipe from Planet Hollywood (Downtown Disney)


Planet Hollywood's chicken fingers are world famous
because of their extra crispy crunch.
The secret to this crunch is: Cap'n Crunch!!
It's hard to believe but this lightly-sweetened cereal
gives this chicken an incredible flavor.
Try it and see for yourself!
 
 

Chicken Fingers Recipe

Ingredients:

2 lbs. raw chicken breast tenderloins
4 cups Cap'n Crunch Cereal
3 cups corn flakes (unsweetened)
1 cup all-purpose flour
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 cup of milk
1 whole egg
Vegetable or canola oil for frying
Honey mustard for dipping (optional)


Directions:

Pour the Cap'n Crunch in your food processor and grind until you have a fine grain. Do the same for the corn flakes. (If you don't have a food processor, simply pour the cereal into a gallon-size freezer bag and smash with a rolling pin.) Pour both cereals into a shallow dish and stir to combine. Set aside.

In a second shallow dish, mix flour, onion powder, garlic powder and pepper. Set aside. 

Pour the milk into a large bowl. Add in the egg and whisk together. Set aside. 

Heat 1-inch of oil in a deep pan until temperature reaches 325-degrees F. Reduce heat to medium. 

Create your assembly line: raw chicken, flour mixture, egg wash, cereal mixture.

Dip a chicken tenderloin into the flour, coating all sides, then move over to the egg wash, and then finally to the cereal. Coat well. Carefully set into the hot oil and fry until golden brown and chicken has cooked completely through. (It's better to slow cook the chicken on a lower heat because the cereal crumb coating can easily burn. Believe me, I burned 4 tenders before figuring this out.)

Remove from oil and place on a paper towel-lined plate to drain. Repeat the process for all tenderloins. 

Serve hot with honey mustard for dipping. Enjoy!

Breakfast Pizza Recipe from Chef Mickey's (Disney's Contemporary Resort)


Eggs, bacon and 3 kinds of cheese!!
Nothing could be easier than this recipe for
Chef Mickey's Breakfast Pizza from Disney's Contemporary Resort.
 
 
 
Breakfast Pizza
*makes 1 (12-inch) pizza
 
 
Ingredients:
 
1 (12-inch) pre-made pizza crust
3 eggs, scrambled and cooled
1/4 cup heavy whipping cream
1 cup cheddar cheese, shredded
1/2 cup provolone cheese, shredded
1/2 cup mozzarella cheese, shredded
5 slices cooked bacon, cooled and chopped
 
 
 
Directions:
 
Preheat oven to 375 degrees (F).
 
Place pre-made pizza crust on pizza pan. Set aside.
 
Mix scrambled eggs with heavy whipping cream and blend well, breaking eggs into small bits with a spatula. Spread in an even layer over the pizza crust. Top with cheddar, provolone and mozzarella. Sprinkle cooked bacon crumbles over the top.
 
Place into a preheated oven and bake at 375 degrees (F) for 12-15 minutes until cheese is melted and crust is golden brown. Cut into slices and serve.

Apple Pie Cupcake Recipe from Disney World's "Limited Time Magic" (4th of July)

 
Earlier this year, Disney World had a promotion called "Limited Time Magic"
where they offered select items in the parks for a specified amount of time.
These cupcakes were part of that promotion and were available
during the week of the 4th of July in honor of America's birthday.
They were extremely popular due to their incredible flavor combination of:
Apple Pie Filling, Caramel Buttercream Frosting
and Apple Cinnamon Streusel
 
Sounds delicious, right?
Well, you may not be able to find them in the parks any longer,
but you can make them in your very own home following this easy recipe.
Yay!!!
 
 
 


Apple Pie Cupcake Ingredients:
*makes 8 jumbo or 20 standard-size cupcakes
 
1 yellow or vanilla cake mix
water, oil and eggs (amount specified on back of cake mix box)
1 (21 ounces) can of apple pie filling
 
 
Directions:
 
Mix and bake cupcakes according to directions on package. Let cool at least 5-6 hours, preferably overnight so they can firm up before cutting into them.
 
Take a sharp knife and insert it 1/2 inch away from the top edge of cupcake. Cut a 1 1/2-inch diameter circle into the top of the cupcake, about 1 1/2 inches deep. Carefully pop out the center divit of cupcake and set aside. Do not discard, you will need it again. (It's easiest to watch this step on our how-to video, link is near bottom of post.)
 
Fill the center hole with apple fie filling. Replace the divit on top with the flat side down and peak facing up. The filling will act as a glue. Set aside.
 
 
 
 
Apple Cinnamon Streusel Ingredients:
 
2 (single serving size) packets of Apple-Cinnamon Instant Oatmeal
1/3 cup all-purpose flour
1/2 cup light brown sugar
4 tablespoons butter, melted
 
 
Directions:
 
Preheat oven to 350 degreees (F).
 
Pour the oatmeal out onto a shallow dish or bowl. Add flour and brown sugar. Mix with a spoon. Drizzle melted butter and stir until well coated.
 
Spread mixture out onto a parchment or foil-lined baking sheet. Bake at 350 degrees (F) for 10 minutes, watching it carefully so it doesn't burn. Remove from oven and let cool.
 
Take a spatula and break up the large chunks or place in a gallon-size freezer bag and crush with a rolling pin. Set aside.
 
 
 
Caramel Buttercream Frosting Ingredients:
 
1 stick (1/2 cup) butter, softened to room temperature
1 cup vegetable shortening
1 teaspoon vanilla extract
3 tablespoons caramel sundae syrup
7 cups powdered sugar
4-6 tablespoons milk
 
 
Directions:
 
Mix butter, vegetable shortening, vanilla and caramel syrup in electric mixer until creamy. Add powdered sugar, 1 cup at a time, mixing well after each. After all the powdered sugar has been added, the frosting will be very thick and hard to mix. Add in 4 to 6 tablespoons of milk and mix until the frosting has a whipped consistency.
 
Spoon into a cake decorating bag fitted with a star tip (Wilton 1M) or if you don't have those items, simply spoon it into a gallon-size freezer bag and cut 1/2 inch off one corner. Squeeze out air and twist top so you have a homemade icing bag.
 
Starting at the base of the cupcake, swirl frosting up and around the peak. Now, take a handful of the broken streusel and press into the bottom layer of frosting. (Watch the video to see this step.)
 
And that's it! You're Apple Pie Cupcake is ready to eat!
