Butterscotch Candy Recipe from Le Cellier (Epcot: Canada Pavilion)




Butterscotch Candy Recipe from Le Cellier
*makes 40 pieces


Ingredients:

16 ounces butterscotch chips
16 ounces white chocolate chips
1 cup heavy cream

In a saucepan, heat cream to boiling. Remove from heat.

Place butterscotch and chocolate chips in a microwave-safe bowl. Heat on medium heat for 1 minute. Stir. Continue to heat in 30 second increments until completely melted, stirring occasionally. 

Pour hot cream into melted chocolate and stir until well blended. Mixture will be thick.

Line a 9x9 dish with plastic wrap. Spoon butterscotch mixture into pan and spread evenly. Cover top with another sheet of plastic wrap and place in fridge until set.

When completely cool, cut into cubes with a sharp knife. Enjoy!!

Honey Sesame Chicken and Steamed Rice from Nine Dragons (Epcot: ChinaPavilion)




Honey Sesame Chicken from Nine Dragons (Epcot: China Pavilion)
*serves 4


Ingredients:

4 chicken breasts, cubed


Marinade:

1/2 cup water
1 teaspoon chicken base (it's a paste, usually found near boullion cubes in most supermarkets)
white pepper, to taste
salt, to taste
1 tablespoon sugar
1/2 teaspoon cooking wine
1/2 teaspoon sesame oil


Batter:

3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 cup cornstarch
1 egg, beaten
2/3 cups water
2 tablespoons vegetable oil
pinch of salt


Honey Sauce:

1/8 cup honey
1/4 cup sugar
1 tablespoon white vinegar


Garnishes:

toasted sesame seeds
chopped green onions (optional)


Directions:


Mix marinade ingredients in a large mixing bowl. Add in cubed chicken and let sit in fridge for at least 1 hour.

Mix batter ingredients in a separate large bowl. Set aside.

In a medium-size saucepan, heat the honey sauce ingredients, stirring well.

Remove chicken from fridge and create an assembly line of bowls: 1. chicken 2. batter 3. sauce

Heat a deep pan with 1 inch of cooking oil on medium high until it reaches 320 degrees F. 

Take pieces of chicken from marinade and dip into the batter. Transfer to hot oil immediately. Cook until golden brown and cooked through. Place on a paper towel lined plate to drain.

Transfer all of the fried chicken chunks to a large bowl and pour the heated honey sauce over. Toss carefully with tongs to coat all pieces. Serve on plate with a side of steamed rice (recipe below) or stir-fried noodles. Sprinkle with toasted sesame seeds and green onions (optional). 



Steamed Rice

2 cups white rice
2 1/2 cups water
Salt, to taste

Place rice in a strainer and rinse until water runs clear. Transfer to a medium-size pot. Pour in water. Place tight-fitting lid on pot and heat on high for 5-10 minutes until boiling. Remove lid and add salt. 

Turn heat to low and replace the lid. Cook for an additional 15-20 minutes until rice is tender. Remove from heat and leave lid on to let steam for 5 minutes before serving.

French Toast Loaf Recipe from Main Street Bakery (Magic Kingdom)

The Main Street Bakery in Magic Kingdom
has always been known for its vast selection of delectable pastries,
and the French Toast Loaf may be at the top of the list.
Layers of bread are filled with cinnamon and brown sugar
and then drowned in batter, making for a perfect breakfast or dessert.

French Toast Loaf from Main Street Bakery
*serves 8


Ingredients:

12 slices of homestyle or round top white bread (not thin sandwich)
non-stick cooking spray
2 sticks (1 cup) unsalted butter, chilled


Brown Sugar Mixture:

1 1/3 cups light brown sugar
1 teaspoon ground cinnamon


Batter:

1 1/4 cup (10 ounces) heavy whipping cream
4 large eggs
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon



Directions:

Set 12 slices of bread on a plate or tray and let air out for 3-4 hours, to rid them of their moisture.

Slice each butter stick into 15 thin slices. Keep chilled until ready to use.

Mix light brown sugar with ground cinnamon. Set aside.

Spray a loaf pan with non-stick cooking spray. Place 3 slices of the bread on the bottom of the pan. Press down with the palm of your hand. Sprinkle 1/3 of the brown sugar mixture over them. Spread 10 pats of the butter on top of the brown sugar.

Layer another 3 slices of bread on top of the butter. Repeat with another 1/3 of brown sugar and 10 pats of butter.

Repeat with another layer of 3 slices of bread, the remainder of the brown sugar and butter. 

Finish off with the last 3 slices of bread. Press this all down with your hands so that the bread does not extend above the rim of the loaf pan. Set aside.

Whisk 4 large eggs in a bowl. Add the heavy cream and mix well. Stir in the vanilla and cinnamon. Slowly pour this batter over the loaf a little bit at a time. Using a fork, lift the sides of the bread so that the liquid seeps down into the lower layers. Pour the remaining batter.

Cover the loaf pan with plastic wrap. Secure with a sheet of foil. Place in the fridge to chill overnight.



THE FOLLOWING DAY:

Preheat oven to 325 degrees.

Remove the foil and discard the plastic wrap. Replace the foil and secure. Place pan in oven and bake for 1 hour at 325 degrees. You may want to set a baking sheet or pan on the rack below to catch any overflowing liquid.

After 1 hour, remove the foil. Bake uncovered for an additional 30 minutes at 325 degrees.

Remove from oven and let cool completely.

Slice with a sharp knife and set on serving plates.

Sprinkle with powdered sugar and serve with syrup or fruit preserves.
