Cheesy Potato Casserole
32 ounces frozen diced potatoes
26 ounces frozen hashbrown potatoes
2 cups diced onions
2 cups heavy whipping cream
8 egg yolks
8 ounces cheddar cheese, shredded
6 ounces grated parmesan cheese
2 tablespoons salt
1 1/2 teaspoons ground black pepper
1 tablespoon dried thyme
In a large bowl, mix all ingredients, reserving 1/2 cup of cheddar cheese for later. Stir well. Spray a large casserole dish or lasagna pan with non-stick cooking spray. Spoon potatoes into dish. Cover with aluminum foil and place in oven that has been preheated to 350 degrees. Bake for 50 minutes.
Remove from oven and discard foil. Sprinkle top of casserole with reserved cheese. Return to oven and bake (uncovered) for an additional 30 minutes at 350 degrees. Serve hot. Enjoy!!
