Walt Disney's Chili Recipe
2 pounds dry pinto beans
2 onions, sliced
1/4 cup vegetable oil
2 cloves garlic, chopped
1 cup celery, diced
2 pounds lean ground beef
1 teaspoon chili powder (or more if desired)
1 teaspoon paprika
1 teaspoon dried thyme
1 (28 ounce) can tomatoes (about 3 cups)
salt and pepper, to taste
1 jalapeno pepper, chopped (optional)
optional seasonings (add 1/8 tsp): coriander, turmeric, chili seeds, fennel, cloves, cinnamon, dry ginger
Day 1 Directions:
Wash and sort beans. Soak overnight in cold water.
Day 2 Directions:
Drain beans and place in a large pot. Add fresh water until it is 2-inches higher than beans. Add sliced onions and cover pot with lid. Simmer on medium-low until tender (about 2 hours).
In a separate pot, heat oil and saute garlic until lightly browned. Add in celery and beef and cook until meat is fully cooked and browned. Sprinkle in chili powder, paprika, thyme and (optional) jalapeno pepper. Pour in tomatoes and break up with a spoon. Cover with lid and simmer on low for 1 hour.
When beans are tender, combine with meat mixture. Add salt and pepper (and optional seasonings) to taste. Cover and cook on low for an additional 30 minutes. Serve with crackers or Whispering Canyon Cafe's Cornbread.
