Walt Disney's Own Chili and Beans Recipe

Walt Disney's Chili Recipe
*serves 6-8


2 pounds dry pinto beans
2 onions, sliced
1/4 cup vegetable oil
2 cloves garlic, chopped
1 cup celery, diced
2 pounds lean ground beef
1 teaspoon chili powder (or more if desired)
1 teaspoon paprika
1 teaspoon dried thyme
1 (28 ounce) can tomatoes (about 3 cups)
salt and pepper, to taste
1 jalapeno pepper, chopped (optional)
optional seasonings (add 1/8 tsp): coriander, turmeric, chili seeds, fennel, cloves, cinnamon, dry ginger

Day 1 Directions:

Wash and sort beans. Soak overnight in cold water.

Day 2 Directions:

Drain beans and place in a large pot. Add fresh water until it is 2-inches higher than beans. Add sliced onions and cover pot with lid. Simmer on medium-low until tender (about 2 hours).

In a separate pot, heat oil and saute garlic until lightly browned. Add in celery and beef and cook until meat is fully cooked and browned. Sprinkle in chili powder, paprika, thyme and (optional) jalapeno pepper. Pour in tomatoes and break up with a spoon. Cover with lid and simmer on low for 1 hour.

When beans are tender, combine with meat mixture. Add salt and pepper (and optional seasonings) to taste. Cover and cook on low for an additional 30 minutes. Serve with crackers or Whispering Canyon Cafe's Cornbread.

Disney Maleficent Movie Poster Revealed

Disney has just released the official poster for their newest summer blockbuster, Maleficent, starring Angelina Jolie as the "Mistress of All Evil".

The film also stars: Elle Fanning as Princess Aurora, Brenton Thwaites as Prince Phillip, Sharlto Copley as King Stefan, Miranda Richardson as Queen Ulla and Kenneth Cranham as King Henry. Angelina Jolie's own daughter (Vivienne Jolie-Pitt) will also play a small part as young Aurora.

It is being directed by Robert Stromberg (Academy Award-winning production designer for Avatar, Alice in Wonderland and Oz, the Great and Powerful). 

Maleficent is set to release May 30, 2014.

Chicken Tortellini Soup Recipe from Tony's Town Square (Magic Kingdom)

Chicken Tortellini Soup from Tony's Town Square
*serves 4


1 cup chicken breast meat, diced
1 tablespoon butter or margarine
2/3 cup carrots, diced
1 cup celery, diced
1 cup onion, diced
5 chicken bouillon cubes
5 1/2 cups hot water
1 tablespoon parsley
1/4 teaspoon ground thyme
1/4 teaspoon garlic powder
white pepper
1/2 pound tortellini, cooked according to package directions


In a large pot, melt butter. Add carrots and saute 3-4 minutes. Add in diced chicken and cook another 5 minutes until chicken is fully cooked. Add celery and onions and continue to saute 7-8 minutes until vegetables are tender and onions are translucent.

In a separate bowl, dissolve chicken bouillon cubes in hot water. Pour into pot. Add all of the remaining ingredients (except for tortellini). Simmer on medium-low for 20 minutes. Salt and pepper to taste.

While the soup is simmering, cook tortellini (in a separate pot) according to package directions. Drain water. 

After the soup has cooked for 20 minutes, add in the tortellini and stir. Serve with crusty bread. Enjoy!!
