Disneyland Choux Fritters
*makes about 3 dozen
1 stick (1/2 cup) butter
1 cup boiling water
1 cup all-purpose flour, sifted
1/2 teaspoon salt
4 cups vegetable oil
Combine butter, boiling water, flour and salt in a saucepan over medium heat. Beat vigorously until mixture leaves side of pan and forms a ball. Remove from heat and cool slightly. Spoon into a mixing bowl. Add the eggs, one at a time, beating well after each addition. When all the eggs have been added, the mixture should hold its shape in the spoon.
Heat oil to 375 degrees. Drop dough by tablespoons into hot oil and cook until golden brown. Remove with slotted spoon and drain on paper towels. Sprinkle with sugar and serve hot.
