Crystal Palace: Cheddar Breakfast Potatoes

This is my favorite item on the buffet!
I could not get enough of these
and was thrilled to find I could
make them at home.

Crystal Palace: Cheddar Breakfast Potatoes
*serves 6-8


4 cups shredded Idaho potatoes
1 cup sour cream
1 cup heavy cream
2 cups shredded cheddar cheese
2 teaspoons salt
1 teaspoon freshly ground black pepper


Place shredded potatoes into a large mixing bowl. Add in sour cream, heavy cream, 1 cup of the shredded cheddar cheese and salt & pepper. Mix gently until well incorporated.

Place into a greased or buttered casserole dish and bake at 350 degrees for 35 minutes. Top with remaining cup of cheese and return to oven for 10 more minutes or until cheese is melted and starting to brown.
