"The King" (Elvis) Cupcake Recipe from Disney's Pop Century Resort

Pop Century Resort has some of the most amazing desserts
you'll find on Disney property like their Twinkie Tiramisu and Tie-Dye Cheesecake 
but this dessert really takes the (cup)cake.
This unusually delicious treat was created as a tribute to Elvis Presley
and includes some of the legend's favorite indulgences
like peanut butter, bananas and bacon.
And now you too can make these cupcakes
that are truly fit for a "King".

"The King" Cupcakes
*makes 18 standard size cupcakes

Candied Bacon Ingredients:

6 slices bacon
1/2 cup brown sugar
1/2 teaspoon cinnamon

Candied Bacon Directions:

Mix brown sugar and cinnamon in a shallow dish. Dredge the bacon slices in the brown sugar mixture, coating both sides. Shake excess. Place on foil-lined baking sheets and bake at 350 degrees for 15 minutes. Let cool 2-3 minutes before removing from pan. Cool completely on plate before crumbling or cutting into small pieces for garnish.

Cupcake Ingredients:

1 dark chocolate or chocolate fudge cake mix
3 eggs (for cake mix)
oil (for cake mix)
water (for cake mix)

Cupcake Directions:

Mix and bake cupcakes according to directions on package. Let cupcakes cool at least 4 hours. 

Using a sharp knife, cut a 1-inch deep circle 1/2 inch away from the edge of the cupcake. Remove the piece and set aside for later. Do not discard. (Watch the video at the bottom of this post to see how this step is done.)

Filling Ingredients:

1 (3.4 ounce) package instant banana pudding
1 3/4 cups milk (whole or 2%, not skim)

Filling Directions:

Stir pudding mix and milk in a bowl for 2 minutes. Place in fridge to chill. 

Spoon chilled pudding into a gallon-size freezer bag. Snip 1-inch off one of the bottom corners to create a cake icing bag. Squeeze the pudding into each cupcake hole until just below the surface. Take the piece you removed and place it on top of the filled hole with the flat side down, so the peak faces upward. Do this for all cupcakes.

Peanut Butter Frosting Ingredients:

1/2 cup (1 stick) butter, softened to room temperature
1 cup peanut butter (smooth, not chunky)
1 cup vegetable shortening
1 teaspoon vanilla extract
2 lbs powdered sugar
6-8 tablespoons milk

Peanut Butter Frosting Directions:

In an electric mixer, combine butter, peanut butter and vegetable shortening. Add vanilla and mix until creamy. Slowly add the powdered sugar, a little at a time, mixing well after adding. When the frosting gets thick, add in the milk and blend on high until light and fluffy. 

Place frosting into a cake icing bag fitted with a large star-shaped tip (I used Wilton 1M) or you can use a freezer bag like in the filling step above. Squeeze frosting in a circular motion starting at the cupcake base and building up, making sure to cover the peak of the cupcake piece sitting on top. 

Garnish with the candied bacon pieces.

Chocolate Drizzle Ingredients:

1/2 cup chocolate morsels
1 teaspoon vegetable shortening

Chocolate Drizzle Directions:

Place chocolate chips and shortening in a microwave-safe bowl and heat in 30 second increments until completely melted, stirring occasionally. Using a fork, drizzle the chocolate on top of the frosted cupcake by moving your hand in a quick back and forth motion.

That's it!! You're done!! Put on your blue suede shoes and enjoy!!

Lineup of Events for Epcot's 30th Anniversary

On October 1st, Epcot will celebrate their 30th anniversary at Walt Disney World. Here is a lineup of the events scheduled for that day**:

Epcot History Presentations (located inside World Showplace)*

1 - 2 p.m. - Designing the Future: Past and Present (a panel of Disney Imagineers remembers 30 years of building tomorrow)

4:30 - 6 p.m. - Epcot: How it Changed the World with Marty Sklar

6:30 - 8 p.m. - Epcot: How it Changed the World with Marty Sklar

Anniversary Moment at America Gardens Theater*

3 p.m. - Appearances by Disney leaders and performances by Mariachi Cobre and Voices of Liberty

9 p.m. - A special 30th Anniversary edition tag will be added to IllumiNations

Guests can also purchase special Epcot 30th Anniversary merchandise such as t-shirts and hats while in the park.

**Park admission to Epcot is required to take part in these events.

Big Thunder Mountain is getting an Interactive Queue

Yesterday Disney announced they are adding a new interactive feature to the queue of Big Thunder Mountain Railroad in Magic Kingdom Park. Guests will be able to immerse themselves in the attraction story while they wait to ride.

There is no announcement date for the update but the changes will be made overnight, so no closures are expected. Stay tuned and I'll keep you posted.

Check Out Test Track's New SimCar

Just outside of Test Track, at Cool Wash Station, you'll find a sneak peek at the new attraction vehicles. The new sleek blue design replaces the old white and yellow cars as shown below.

The redesigned attraction will allow guests to experience the world of automotive design firsthand by creating  their own custom-concept vehicle. They will then board the 6-passenger SimCar where they will test how it handles on the track.

The brand-new Test Track presented by Chevrolet reopens this fall in Epcot's FutureWorld.

Disney Magic says "Howdy" in a BIG Way!

Being a Texan, I can appreciate the extra-large cowboy hat the Disney Magic donned as it sailed into Galveston's port today. The Lone Star flags were a nice touch too. ;)

The Magic departs later this afternoon kicking-off Disney Cruise Line's inaugural sailing season from Texas.

Blue Bayou Restaurant is best known for being
the restaurant located inside the
Pirates of the Caribbean ride.
They are also known for their Cajun and Creole dishes.
You can now enjoy their delicious Gumbo at home
following this easy recipe. Enjoy!!

Blue Bayou Gumbo
*serves 8


1/4 cup (4 tablespoons) butter
1/4 cup all-purpose flour
1 cup chopped celery
1 cup diced onions
2 quarts chicken broth
1 tablespoon salt
1/4 teaspoon ground white pepper
1/4 teaspoon cayenne (you can increase this amount if you prefer it spicier)
1 cup diced canned tomatoes
12 ounces frozen cut okra (can also substitute with fresh okra)
2-3 cooked chicken breasts, diced (or cooked steak, cubed; or shrimp*)
2-3 cups pre-cooked Andouille sausage, sliced
2 cups cooked white rice (cook according to package directions)
parsley (optional)


Melt butter in a large pot on medium-high heat. Add flour and stir constantly to create a roux. When the roux is a caramel-color, add in celery and onions and cook for 5-7 minutes. Pour in chicken broth. Mix in the salt, white pepper and cayenne. Let simmer 5 minutes. Now add in the tomatoes, okra, cooked chicken and sausage. Reduce heat to medium-low and cook 1 hour.

While the gumbo is simmering, prepare 2 cups of cooked rice according to package directions. Set aside.

When the gumbo is done, put 2-3 tablespoons of the prepared rice in the bottom of your serving bowls. Now ladle the hot gumbo on top. Garnish with parsley and serve hot. Don't forget to make Disneyland's Cafe Orleans Mickey Beignets for dessert. Yum!!

*If adding shrimp: Don't add it until near the end of the cooking time and make sure to cook it all the way through before serving.

Minnie's Bake Shop Chocolate Chip Supreme Cookies Recipe

If fist-size cookies stuffed with 3 kinds of chocolate and nuts
are your kind of thing then this recipe is definitely for you!
Minnie's Bake Shop Cookies are the individually-packed
treats you often see in the Disney World Resorts and gift shops.
They can also be found at Magic Kingdom's Confectionary.
Here is a pic of what they look like:

Well, you'll be happy to know we are making the recipe for the
Ingredients (for metric conversion, scroll to bottom of post):
*makes 1 dozen cookies ;)

1 cup butter (2 sticks), softened to room temperature
1 cup light brown sugar
3/4 cup powdered sugar (this is NOT a typo, it IS powdered sugar, NOT granulated sugar)
1 egg
2 tablespoons water
1/2 teaspoon vanilla
2  2/3 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda


3/4 cup semi-sweet chocolate morsels
3/4 cup dark chocolate chunks
3/4 cup Wilton Candy Melts (light cocoa wafers), roughly chopped
3/4 cup toffee bits (optional)
1 cup chopped pecans or almonds (optional)
Anything else you may want like: M&M's, Reese's Pieces, butterscotch chips, etc.


   Place softened butter and sugars in a large mixing bowl. Cream with an electric mixer on high. Add the egg, water and vanilla. Mix well. Add in flour, salt and baking soda. Mix well to incorporate, stopping once to scrape sides of bowl then mix again. Add in chocolate and nuts then mix just enough to distribute throughout dough.

   Preheat oven to 400 degrees.

   Line baking sheets with parchment paper. Using a standard-size ice cream scoop, place heaping scoops of dough onto cookie sheets. Give them plenty of room, you can probably fit about 5 per sheet.

   Place the baking sheets of dough directly into your freezer. Let them chill for 15-20 minutes until firm. This will firm up the butter in the dough and prevent excessive spreading. Remember, we want the cookies to be thick mounds, not flat discs. Remove from freezer and place into hot (400 degree) oven. Set timer for 2 minutes.Blasting the dough at the high temperature will create a crisp outer shell while keeping the inside moist.

   After 2 minutes, lower heat to 350 degrees and bake cookies for an additional 15 minutes until light golden brown. Remove from oven and let cool 5 minutes on pans. Slide the cookies onto cooling racks and let cool completely, at least 15 minutes. Okay, now dig in!


   Okay, confession time: I have never been a huge chocolate chip cookie fan - that is - until I made these cookies. I've never really cared for the thin, dry, brittle cookies that I have made or purchased so I usually pass on them. But these cookies are AWESOME!! They are strong on the outside, not dry or hard, but firm. Then when you take a bite, the inside is unbelievably moist and every bite is filled with chocolate and nuts. It's the perfect cookie!!

   I did a test run with these and my family devoured them. By the time I made them the second time (on camera) there was only 1 left from the first batch. :O Yes, they were an absolute hit. And they are HUGE! I placed one in my hand and it covered the entire palm area. I had to eat one half at a time because they are so big. Even Mickey couldn't believe their size!

Series: Things to Do for FREE at Disney: Electrical Water Pageant

For our second installment of "Things to Do for FREE at Disney", we'll focus on The Electrical Water Pageant.

   The Electrical Water Pageant consists of 2 strings of 7 barges, each carrying a 25-foot tall screen of lights featuring King Neptune and creatures from under the sea in an aquatic parade set to Disney music. The pageant concludes with an inspirational salute to America, with flags and stars set to a patriotic musical score. It appears nightly on Bay Lake and Seven Seas Lagoon near the following resorts at these times:

Disney's Grand Floridian Resort & Spa - 9:15 p.m.

Disney's Wilderness Lodge - 9:35 p.m.

Disney's Fort Wilderness Resort & Campground - 9:45 p.m.

Disney's Contemporary Resort & Bay Lake Tower - 10:05 p.m.

Magic Kingdom Park* - 10:20 p.m. (only during extended hours)


  You can view The Electrical Water Pageant from the beaches of the above listed resorts and from outside Magic Kingdom. *Note: The Electrical Water Pageant may be slightly delayed on nights when Magic Kingdom's fireworks ("Wishes") are scheduled for 9 p.m. There is no charge to view this light show.

AMC Theater in Downtown Disney offers "Sensory Friendly" Movies for Autistic Guests

Kudos to Walt Disney World and AMC Theaters for offering "sensory friendly" films for guests with autism. This program was initiated by a parent of an autistic child in Columbia, Maryland, who requested the changes specifically designed for children with autism. More than 300 parents and children attended that screening.

During a "sensory friendly" showing, theater lights are turned up, sound is reduced and audience members are welcome to get up and move about during the film.

The following is the a list of "sensory friendly" films that will be shown at AMC Downtown Disney 24 (Walt Disney World Resort). All shows take place at 10 a.m. (Dates and films subject to change).

Finding Nemo - September 22

Frankenweenie - October 13

Wreck-It Ralph - November 10

Rise of the Guardians - December 8
