Cape May Cafe: Mickey Macaroni & Cheese Recipe



 
Cape May Cafe: Mickey Macaroni & Cheese
*serves 6-8

Ingredients:

1 1/4 tablespoons all-purpose flour
1 1/2 tablespoons butter
1 cup milk
1 cup American cheese, grated
salt and white pepper, to taste


Directions:

Cook macaroni according to package directions. Drain and set aside.

Melt butter in saucepan, add flour and stir, creating a roux. Pour in milk and whisk. Bring to a boil. Remove from heat and stir in grated cheese. Mix in prepared macaroni and stir well to incorporate. Salt and pepper to taste.

Spotlight On: Disney's Pop Century Resort




   Disney's Pop Century Resort is my all-time FAVORITE resort of all the value resorts. We have stayed at Pop a total of three times and I plan on staying there again on our next visit to WDW (hopefully next year). Pop Century is themed after different decades in American Pop Culture, from the '50s through the '90s.




    Similar to the other Value Resorts, Pop Century has 10 whimsically-themed, 4-story buildings decorated with popular catchphrases from their respective decade. Situated in front of each building you will find giant icons in a tribute to pop culture from that time.

   Take a stroll into Classic Hall (the main building) where you will find the front desk.



   If the little ones are anxious, send them over to the kids area where they can enjoy a Disney feature film while you check-in.



   Located across from the lobby is Everything Pop gift shop and food court. You can find everything from toiletries to clothing to Disney Park merchandise.



   If you're hungry from your long flight or drive, follow your nose next door to the food court. There are seven stations offering a wide variety of options sure to please every member of the family: pasta, burgers, chili dogs, soups, wraps, waffles & breakfast platters. And check out the menu board because every evening there is a different "homestyle" dish called "Mom's Night Out". My favorite MNO meal is the buttermilk fried chicken with green beans and mashed potatoes.

   In a hurry to check out your room? Then stop by the Grab-N-Go market for pre-packaged salads, sandwiches, yogurt parfaits, fresh fruit and ice cream novelties. For late night dining, call Peace of Pizza Delivery from your resort phone (from 4 pm to midnight). And for those of you with a sweet tooth, try a fresh-baked cookie, pastry, dessert or sundae.



Once you are in your room, you should find a set-up like one of the diagrams below. Guest rooms include either two double beds or one king, a table and chairs, nightstand, dresser, a TV, vanity sink (separate from bathroom), toilet and shower. And depending on what decade you are staying in, the theme will continue throughout the room.






   The resort also offers recreational activities like jogging trails, an arcade, playgrounds and three swimming pools. The flower shaped Hippy-Dippy Pool is located directly in front of the 60s building and is usually the most crowded. If you're looking for a less populated pool try either the Bowling Pin Pool in the 50s section or the Computer Pool in the 90s.

  A laundry room is located at each pool and there are vending machines available with detergent and fabric softener, just in case you forgot yours at home. :D





  Standard room amenities at this resort include: cable TV, Wi-Fi, an in-room safe, iron and ironing board and hair dryer. Other items available upon request are mini-refrigerators (at additional cost unless a medical necessity) and Pack N Play playards (when traveling with infants/toddlers). Be sure and speak to your Disney Reservation Specialist or resort concierge about these items.

Cape May Cafe: Chocolate Cookie Mousse Recipe





Cape May Cafe: Chocolate Cookie Mousse
*makes 6 servings



Ingredients:

6 chocolate sandwich cookies with creme filling (Oreos)
2/3 cup white chocolate
1 cup heavy whipping cream
1/2 teaspoon Knox granulated gelatin
3 egg yolks


Directions:

   Process cookies in a food processor until finely ground or crush in a freezer bag with a rolling pin. Set aside.

   Melt white chocolate in a double boiler or in microwave at 50% power in 30 second increments, stirring often. Set aside for next step.

   Whip the heavy cream until medium-firm peaks form. Pour 1/4 of the whipped cream into a saucepan and sprinkle in the gelatin. Let sit for 3 minutes until the gelatin softens and swells. Turn heat to low and stir constantly until gelatin dissolves. Remove pan from heat and blend in egg yolks. Add in the melted chocolate, stirring quickly to avoid lumps.

   Fold the remaining 3/4 of whipped cream with the crushed cookies then mix into the white chocolate/gelatin mixture. Spoon into serving bowls or champagne glasses. Refrigerate 2 - 4 hours before serving. Enjoy!!

Boma: Coca-Cola BBQ Sauce Recipe

A sweet and spicy BBQ sauce that goes well with pork, beef or chicken.



Boma: Coca-Cola BBQ Sauce
*makes about 1 quart


Ingredients:



1 Spanish onion, finely diced
1 tablespoon minced garlic
2 jalapeno peppers, seeded and minced
4 tablespoons brown sugar
2 (12 oz) cans Coca-Cola
2 tablespoons white vinegar
4 cups ketchup
1 tablespoon olive oil


Directions:


     Heat the olive oil in a large saucepot over medium-high heat. Add in the onions and cook about 3 minutes or until translucent and tender. Add the garlic, jalapeno peppers, brown sugar and cook for another minute. Pour in the Coca-Cola and bring to a boil. Turn down heat and let it continue to cook until it reaches a syrup consistency, stirring constantly. Mix in the ketchup and vinegar. Turn heat down to low and simmer for 20 minutes.

   *Store in a covered container in the fridge.

Disney's Bob Iger Confirms 'Avengers 2' and other Marvel News




The huge box office success of The Avengers movie has led to quick speculation that there would be a sequel. And these rumors were confirmed this past Tuesday when Disney CEO Bob Iger announced that The Avengers 2 was in fact in the works, along with sequels to several other movies from the Marvel franchise. Iron Man 3 begins filming this summer with plans for a May 3, 2013 release. Another Thor film is set to debut on November 15, 2013 and Captain America 2 is scheduled for April 14, 2014. There are also talks about a Hulk reboot starring Mark Ruffalo.


   Iger also said that The Avengers-themed attractions are in the works for some of the Disney Parks. The locations have yet to be announced. I don't know about you but I think Disney's Hollywood Studios would be a great place for The Avengers to call home. What do you think? Let us know in the comments below.

Monkey Bread Recipe


This is a non-Disney recipe but it is so easy to make and delicious
I figured I'd share it with all of you Disney Diners out there.
Enjoy!!



Monkey Bread
*makes 1 bundt cake

Ingredients:

4 (7.5 oz) tubes of refrigerator biscuits (not jumbo or Grands)
1 cup sugar
2 tablespoons ground cinnamon

1 cup sugar
1 tablespoon ground cinnamon
1 1/2 sticks of butter





Directions:

Preheat oven to 350 degrees.

In a gallon-size Ziploc bag, mix 1 cup of sugar with 2 tablespoons cinnamon. Set aside.



Open cans of biscuits and cut each one into quarters with kitchen scissors or a sharp knife.



Place a handful of the biscuits into the Ziploc bag and shake to coat with the cinnamon-sugar mixture. Now transfer the coated dough pieces into a greased bundt or dome-shaped cake pan. Repeat with remaining dough. Set aside.



Melt 1 1/2 sticks of butter in a saucepan. Add in 1 cup of sugar and 1 tablespoon of cinnamon. Stir well and cook on medium heat until bubbly and lightly carmelized.




 
Remove from heat and pour over the layered biscuit dough in the pan.



Place the pan in the oven and bake for 35 - 40 minutes at 350 degrees.



 Let cool at least 10 minutes before tranferring to a serving platter. Let cool a few more minutes. Now's the fun part! Pull it apart with your hands like monkeys and eat!! Yum!

Wolfgang Puck's BBQ Chicken Quesadilla Recipe




Wolfgang Puck's BBQ Chicken Quesadilla
*serves 4-6 


Mexican Cream Ingredients:

1 lime, juiced
1 1/2 cups sour cream
salt and pepper

Mexican Cream Directions:

In a medium-size bowl, stir together the lime juice and sour cream. Salt and pepper to taste. Cover with plastic wrap and store in refrigerator.



Fire-Roasted Tomato Salsa Ingredients:

5 Roma tomatoes
2 dried chipotle chilies (reconstitute in warm water until they are soft again, then drain)
1/2 cup fresh lime juice
1/2 cup chopped basil leaves
1/4 cup minced garlic
1/4 cup balsamic vinegar
2 teaspoons sugar
2 teaspoons salt
1/2 teaspoon cracked black pepper
1 cup olive oil

Fire-Roasted Tomato Salsa Directions:

Roast the tomatoes on a hot grill (or in a skillet) until blackened. Remove from heat and place into a large bowl. Add in the chipotles and let cool for 15 minutes. Mix in the lime juice, basil and garlic and marinate for 10 minutes. Transfer to a blender or food processor and pulse until chunky. Pour back into the bowl and add in the vinegar, sugar, salt and pepper.Whisk in 1 cup of olive oil. Cover with plastic wrap and store in refrigerator.



Quesadilla Ingredients:

1/4 cup peanut oil
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon chopped cilantro leaves
1 tablespoon chopped green onion
1 teaspoon crushed red pepper
1 pound boneless, skinless chicken breast
salt and pepper
peanut oil
1 red onion, sliced
1/4 - 1/2 cup barbecue sauce
8 (8-inch) flour tortillas
1 cup shredded fontina cheese
1 cup shredded mozzarella cheese
3-4 tablespoons butter


Quesadilla Directions:

In a medium-size bowl, stir together the peanut oil, ginger, garlic, cilantro, green onion and red pepper. Add the chicken breasts, turning to coat. Cover with plastic wrap and marinate 4 hours or overnight, if possible.

Preheat oven to 350 degrees. Remove the chicken breasts from the marinade and season well with salt and pepper. Heat a skillet over medium-high heat. Add enough peanut oil to coat the bottom. Place the chicken breasts in the pan and sear both sides until golden (3 minutes per side). Tranfer to an oven-proof dish and roast in oven for 10-15 minutes. Remove from oven and let cool before cutting into 1/2 inch cubes. Set aside in bowl.

Preheat a pan. Drizzle onion slices with oil and saute until golden brown and tender. Remove from heat and set aside.

Take the cooked chicken cubes and toss with barbecue sauce until well coated. In a separate bowl, mix fontina and mozzarella cheeses.

Place 4 tortillas on a flat work surface. Evenly distribute half the cheese mixture among the four tortillas. Then spread the chicken and onions on top of the cheese. Top them with the remaining cheese and 4 tortillas.

Heat 1 tablespoon of butter in a large skillet over medium-high heat. Place 1 quesadilla in the pan and cook until golden brown (about 3 minutes) on both sides, pressing down with a spatula to seal together. Repeat with remaining quesadillas, adding butter to the pan as needed.

Place each quesadilla on a serving platter and cut into 6 wedges. Drizzle with Mexican Cream and barbecue sauce then top with the Fire-Roasted Salsa and enjoy!!

The Legend of Captain Jack Sparrow Attraction Coming Fall 2012




    Disney Parks Blog has officially confirmed that a new attraction titled "The Legend of Captain Jack Sparrow" featuring everyone's favorite pirate will debut this fall in Disney's Hollywood Studios. Here is the information from their post:


Details are still emerging, but the attraction will give guests a chance to become immersed in the world of the four "Pirates of the Caribbean" films, and an opening date will be announced later this year.

According to Jason Roberts, show producer for Walt Disney Imagineering, "This is going to be an immersive experience. We'll really delve into the story of Captain Jack Sparrow and put our guests in the middle of it all in new and exciting ways. Story is always the most important thing for us at Walt Disney Imagineering, but we're always looking at new ways to tell that story that our guests have never seen before. In this attraction, we'll let you walk in the footsteps of Jack Sparrow. It's not 'the making of,' not 'behind the scenes'...it is really a first-person experience. We worked with the archives as well as the filmmakers while they were shooting the last movie. And as a fan, I just loved sitting through those films again and again, going through all the details and leveraging them for this new experience. It's really been a blast."


   This new attraction will replace "Journey into Narnia" at Disney's Hollywood Studios this fall. And although I enjoyed the Narnia walk-through I am extremely excited about this new experience. I am a HUGE Jack Sparrow fan and look forward to anything Disney has to offer concerning this character.
