Biergarten: Macaroni Salad Recipe




Biergarten: Macaroni Salad
*serves 8

Ingredients:

2 cups dry elbow macaroni
1/2 cup diced celery
1/4 cup canned peas
1/2 cup diced tomato
1/4 cup diced onion
1 cup mayonnaise
1/2 cup regular dill pickle juice
1/4 cup white vinegar
1/4 cup sugar
salt & pepper, to taste


Directions:

   Cook macaroni according to package directions. Drain and let cool. Mix all other ingredients in a large bowl. Add in cooled macaroni and toss gently until well coated. Salt & pepper to taste.

Disney World Soft Pretzels Recipe

Who doesn't love a hot Disney pretzel when your in the park?
Now you can have this bready goodness in your own home
with this easy recipe. You can make a variety of these from
the original salty to cinnamon-sugar to sweet cream cheese-filled.
Enjoy!



Disney World Soft Pretzels
*makes 16 pretzels



Pretzel Dough Ingredients:


2 cups hot water
1 tablespoon sugar
1 envelope active dry yeast
5 cups all-purpose flour
1 tablespoon salt
non-stick cooking spray
2 tablespoons baking soda
1 egg, beaten
Topping Options: coarse Kosher salt, crushed graham cracker crumbs, cinnamon-sugar,
vanilla icing and toasted almond slices

Filling Options: Cream Cheese Filling (recipe below)

Dipping Options: mustard or cheese sauce




Pretzel Dough Directions:

   Place hot water and sugar in a small bowl. Stir until sugar has dissolved. Mix in the yeast and let sit 5 minutes. Combine the salt and flour in a large mixing bowl. Pour in the yeast liquid. Mix on low for 30 seconds with an electric mixer fitted with a dough hook. Continue to beat on medium speed until sides pull away from the bowl. If dough is still sticky, add more flour (1 tablespoon at a time).

   Transfer to a floured surface and knead until smooth. Place into an oiled bowl and cover with plastic wrap. Put it in a warm area and let rise until doubled. Punch dough down and divide into 16 even pieces. Roll one piece of dough at a time into 18-inch strips. (If you wish to make cream cheese-filled pretzels, stop here and follow the instructions below before proceeding.) Twist into a pretzel shape.


   Fill a large pot with 2-inches of water. Stir in baking soda and heat on medium-high. Place pretzels into water and poach 1 minute. Remove from water and place onto parchment paper-lined baking sheet. Brush pretzels with beaten egg and sprinkle on toppings. Bake at 450 degrees for 12-15 minutes until golden brown. Remove from oven. Serve hot with mustard or cheese dip. Enjoy!



Cream Cheese Filling Ingredients (optional):

8 ounces cream cheese, softened to room temperature
1 cup powdered sugar

Filling Directions:

Mix with electric mixer until creamy. Spoon filling into a gallon-size freezer bag and snip off the corner to make an icing bag.

To fill pretzels, follow dough directions above until you have an 18-inch strip of dough. Now roll the strip flat with a rolling pin until it is 1-inch wide. Squeeze a thin strip of icing down the center of the dough strip. Now fold the ends over each other to seal in icing. Twist into pretzel shapes. Continue with the poaching step as shown above in the directions.

Starring Rolls Cafe: Chocolate Peanut Butter Cupcakes


Starring Rolls Cafe at Disney's Hollywood Studios
is known for their outrageously delicious cupcakes including
this Chocolate Peanut Butter Cupcake that is loaded with
chocolate morsels, filled with gooey chocolate fudgy peanut butter,
topped with a mountain of creamy frosting and then garnished
with a heap of chocolate curls.
Now you can have this decadent treat at home following this simple recipe.
Enjoy!


Starring Rolls Cafe: Chocolate Peanut Butter Cupcakes
*makes about 11 jumbo cupcakes (or 24 standard-size)



Cupcake Ingredients:

1 box Devil's Food Cake mix
3 eggs
oil
water
1 cup semi-sweet chocolate morsels


Cupcake Directions:

   Preheat oven to 350-degrees.

   Mix cake mix with eggs, oil and water according to directions on back of box. Fold chocolate morsels into batter. Pour into paper-lined cupcake pans. Bake according to package directions at 350-degrees. Let cool 5-6 hours or overnight before attempting next step.

   Take a sharp knife and cut a 1-inch deep circle into the center of each cupcake, creating a pit (for filling). Carefully remove the cut piece of cupcake and set aside. Do not discard or eat it, you will be needing it later. Do this for each cupcake.



Chocolate Peanut Butter Frosting Ingredients:

2 tubs ready-made Chocolate Fudge flavored frosting
1 cup creamy peanut butter

Chocolate Peanut Butter Frosting Directions:

   Scoop out frosting and peanut butter into a large mixing bowl and mix with an electric mixer on medium-low for a few minutes until creamy and well blended.

   Fill a gallon-size freezer bag with some of the frosting. Cut off the bottom corner to create an opening. Hold the bag in your hand and squeeze the frosting into the pit of the cupcake to just above the edge. Take the small piece you cut out earlier and replace on top of the filled hole but invert it so that the peak is now facing upwards.

   Now take the bag of frosting and swirl it around the top of the cupcake, building up as you circle it until the peak is completely covered. Set aside while you shave your chocolate curls (recipe below).

   Place the chocolate curls randomly on the cupcake sticking them into the frosting to adhere. Put enough curls on so that the frosting is completely covered.



Chocolate Curls Ingredients:

   1 (16 ounce) bag semi-sweet chocolate morsels
   1 tablespoon vegetable oil

Chocolate Curls Directions: (this should be done sometime prior to making your cupcakes)

   Line a bread loaf pan with plastic wrap. Set aside.
 
   Place the chocolate morsels in a microwave-safe bowl. Add the oil. Heat on medium heat in 30 second increments until melted, stirring occasionally. Or you can use a double-boiler on the stove to melt them. Then pour the melted chocolate into the lined loaf pan and set in the freezer for one hour.

   Remove from freezer. You will now have a giant chocolate bar. Wrap the bar in plastic wrap and store in pantry. When ready to use, shave large curls with a vegetable peeler or sharp knife.

Boma: Banana Bread Recipe


     Boma at Animal Kingdom Lodge is my FAVORITE place to eat breakfast when visiting Disney World! (My dream trip would be to stay at AKL and eat breakfast at Boma everyday before heading to a park.) And their banana bread is the best I've ever eaten! I've made tons of banana bread recipes in my life but this one is by far the most delicious. Not only is it packed with (banana) flavor but it is also extremely moist, almost like cake. If you've never eaten at Boma for breakfast, I highly suggest you try it and until then you can get your Boma Banana Bread fix with this recipe. :D



Boma: Banana Bread
*makes 2 loaves




Ingredients:

2 sticks butter, softened
1 1/4 cups sugar
2 eggs
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3 overripe bananas (use ones with black spots for the most flavor), mashed
1/2 teaspoon vanilla extract
1/2 cup buttermilk*




Directions:

     Preheat oven to 350 degrees. Spray two loaf pans with non-stick cooking spray. Set aside.

    Cream butter, sugar and eggs in a large bowl with electric mixer. In a separate bowl, mix flour, baking soda, baking powder and salt. Add the flour mixture to the butter mixture and mix on low. Add in the mashed bananas, buttermilk and vanilla. Mix well. Pour batter evenly into the two greased loaf pans. Bake in oven at 350-degrees for 50 minutes or until toothpick inserted in center comes out clean. Let cool completely before attempting to remove from pans. Slice when cool and enjoy!




*Buttermilk Substitute: Pour 1 tablespoon of lemon juice OR vinegar into the bottom of a measuring cup. Fill to the 1/2 cup mark with regular milk. Let sit 5-10 minutes to slightly curdle. Use as directed above.








New Fantasyland Expansion: Time Lapse Video

   In the far left of the screen you will see the area where Enchanted Tales with Belle, Be Our Guest Restaurant and Gaston's Tavern will be located. The rock-looking building structure on the far right will house the Under the Sea: Journey of the Little Mermaid attraction. Storybook Circus is located near the center where you can find not one, but two Dumbo the Flying Elephant rides along with The Barnstormer and The Fantasyland Train Station.

Landscape of Flavors Food Court at Disney's Art of Animation Resort






    Landscape of Flavors food court at Disney's Art of Animation Resort offers a wide variety of dining options including "create your own" beef, chicken and veggie burgers. The highlight of the food court is the Tandoor ovens (cylindrical ovens that reach very high temperatures quickly) where chefs bake bread, roast chicken, shrimp, sausage and acorn squash along with other vegetables.





   There is also a Mongolian grill for everything from beef to fish.



   For breakfast, try the challah bread French toast. And for lunch there is Naan, an Indian bread that bakes until puffy and is perfect for wraps.
