Biergarten: Black Forest Cake Recipe



    Here is a recipe to celebrate today's national holiday: Chocolate Cake Day!! (I had no idea there was even such a thing, did you?) This is also a perfect dessert for Valentine's Day, coming up in just a few weeks. Let me tell you how hard it was for me to post this recipe since I have NO chocolate anywhere in my house!! (How did that happen??) LOL. But I did it for you, my readers. So, I hope you enjoy it and have a chocolicious day!!  :D


Biergarten: Black Forest Cake



Cake Ingredients:

1 layer prepared chocolate devil's food cake (9-10 inches diameter)
3/4 cup sour cherry juice
2 tablespoons Kirschwasser (cherry brandy)


Whipped Frosting Ingredients:

1 cup water
1 tablespoon gelatin powder
1 quart heavy cream
1/2 cup powdered sugar


Topping Ingredients:

12 ounces canned sour cherries
3 cups chocolate shavings


Directions:

   Cut the prepared and cooled devil's food cake horizontally into three equal layers. Set aside layers. In a small bowl, mix together the sour cherry juice and brandy.

   In a small saucepan, dissolve the gelatin into the water and heat on medium-low until the mixture becomes clear, stirring constantly. Remove from heat and let cool, but do not let set.

   Whip the heavy cream and powdered sugar with an electric mixer until soft peaks form. With the mixer running on low, gradually add in the dissolved gelatin mixture to the whipped cream.

   Place one of the cake layers into the bottom of a 10-inch springform pan. Brush the top of the cake with the cherry juice mixture. Next, spread enough whipped cream to just cover the layer. Top with half the cherries and another layer of whipped cream.

  Set the second layer of cake on top and brush with cherry juice. Cover with whipped cream and the rest of the cherries.

  Finally, place the third layer of cake on top (upside down) and once again brush with the cherry juice mixture. Cover with another layer of whipped cream, smoothing out top with a spatula.

  Place the cake in the refrigerator until it sets along with the remaining whipped cream. Once it has set, place a warm cloth around the pan to prevent it from sticking. Gently unlock and remove from the springform pan. Re-whip the whipped cream and using a spatula, spread evenly around the sides of the cake. Immediately press the chocolate shavings into the sides of the cake, making sure to cover all spots. Sprinkle the remaining chocolate shavings on top of the cake. Replace in fridge until ready to serve. Slice and enjoy!!

1900 Park Fare: Strawberry Soup Recipe


This sweet and simple recipe served at Grand Floridian's 1900 Park Fare
is the perfect dish to share with your loved one this Valentine's Day or any time of the year!




1900 Park Fare: Strawberry Soup


Ingredients:

2 (16 oz) containers frozen sliced strawberries with sugar*, thawed
16 ounces heavy cream
2 ounces sour cream
3 ounces plain yogurt
2 teaspoons plain yogurt for garnish
1 sprig of mint or fresh strawberries for garnish (optional)


Directions:

   Mix thawed strawberries, heavy cream, sour cream and 3 ounces of yogurt. Blend on  low in large mixing bowl with electric mixer (or in blender) until consistency is smooth. Chill. Stir before serving. Pour into bowls and garnish with a sprig of fresh mint and sliced strawberries.

   To create the heart shapes shown pictured above, drop 2 - 3 small dollops of yogurt on top of the soup, then drag a toothpick or knife through the center to create hearts. Enjoy this sweet treat with your sweet! :)


   *If you cannot find frozen sliced strawberries with sugar then you can add 1/2 to 3/4 cups (depending on how sweet you like them) of sugar to your unsweetened strawberries. Give them a good stir after thawing.

Port Orleans Riverside Resort: Key Lime Pie Recipe




   Since today is National Pie Day, I'd thought I'd share a recipe for one of Disney's delicious pies. Enjoy!


Port Orleans Riverside Resort: Key Lime Pie
*makes 1 (9-inch) pie



Ingredients:


1 (14 ounce) can of sweetened condensed milk
4 egg yolks
3 - 4 ounces key lime juice (depends on taste)
4 ounces heavy cream
9" graham cracker pie shelle
1 lime, sliced thin
Whipped cream


Directions:

   In a large bowl, combine sweetened condensed milk and egg yolks with an electric mixer. Add in key lime juice and blend well. Slowly mix in the heavy cream. Pour into the graham cracker shell and bake at 350-degrees for 10-15 minutes. Remove from oven and let cool completely before placing in refrigerator. Chill at least 2 hours. Top with whipped cream and lime slices before serving.

Le Cellier: Maple Syrup (Pecan) Pie

Ingredients:

1 stick of butter, melted
1 cup heavy maple syrup (real maple syrup, not flavored)
1/2 cup brown sugar, firmly packed
1/8 teaspoon salt
4 eggs, lightly beaten
1 1/4 cups pecan halves
1 9-inch pie shell, unbaked
Whipped cream or ice cream, for topping (optional)


Directions:

   Preheat oven to 350 degrees.

   Blend together butter, maple syrup, brown sugar and salt. Stir in eggs, one at at time until well blended. Mix in pecan halves. Pour into the unbaked pie shell and bake at 350 degrees for 40 - 45 minutes or until firm. Let cool completely. Top with a dollop of whipped cream or scoop of ice cream before serving. Enjoy!!

Katsura Grill Opens in Epcot's Japan Pavilion

   Katsura Grill officially opened in Epcot's Japan Pavilion on January 17, 2012. The festivities included an appearance by Mickey & Minnie Mouse and a ribbon-cutting by Erin Youngs (Vice-President of Epcot) and Hideaki Morooka (General Manager International Business Operations for Isetan Mitsukoshi Holdings Ltd., partners with Disney in the Japan Pavilion).

  Katsura Grill's quick service menu includes items like: sushi, Japanese curry, Udon noodles, miso soup and teriyaki dishes with steamed rice and vegetables. For dessert, try their refreshing green tea ice cream or Macha Roll Cake.







Banana-Berry Smoothie Recipe



    I like to make breakfast smoothies for my family at least three times a week. It's a great way to start the day because they are both nutritious and delicious (and the best part is that there are very few dishes to clean up afterwards). :D

   Here's the recipe. Enjoy!!



Banana-Berry Smoothie
*makes about 48 ounces


Ingredients:

16 ounces reduced-fat milk or almond milk
1 cup plain non-fat yogurt
1 1/2 cup frozen strawberries
1 cup frozen blueberries
1 banana, peeled and cut into large chunks
1 cup fresh spinach (optional)
1 tablespoon wheat germ (optional)
1 tablespoon ground flaxseeds (optional)
1 tablespoon chia seeds (I purchase them from Vitacost.com. Click HERE for $10 off your first order.)



Directions:

   Pour the milk and yogurt into your blender first. Then add the remaining ingredients. Blend on High (or press the "Smoothie" or "Milkshake" buttons on your blender if you have them) until well incorporated. Pour into Disney cups (of course) and serve cold.


*I like to change it up occasionally so here are a few variations.


Variations:


Orange Julius Smoothie - omit the blueberries and add 1 cup of orange juice

Fruit Juice Smoothie - I save the juice from canned fruit like mandarin oranges and add it in. Reduce milk to 8 ounces if adding juice.

Berry-Peach Smoothie - omit the bananas and add in 1 cup of canned peaches

Protein Smoothie - mix in 1 scoop of either vanilla-flavored whey or soy protein powder



**Also, sometimes I pour it into a bowl and top it with my Homemade Granola. Yum!!

Disney's "Lone Ranger" Begins Shooting February 2012




    Disney's adaptation of The Lone Ranger is set to begin principal photography this February in New Mexico. The film is being produced by Jerry Bruckheimer (Pirates of the Caribbean, Prince of Persia), and directed by Gore Verbinski (Pirates of the Caribbean, Rango). It stars Johnny Depp (Pirates of the Caribbean) as Tonto and Armie Hammer (The Social Network) as The Lone Ranger. Here is a brief synopsis of the movie from the press release:

   Native American spirit warrior, Tonto (Johnny Depp) recounts the untold tales that transformed John Reid (Armie Hammer), a man of the law, into a legend of justice - taking the audience on a runaway train of epic surprises and humorous friction as the two unlikely heroes must learn to work together and fight against greed and corruption.



   The Lone Ranger is set to open in theaters May 31, 2013.

The Wave: Honey Chicken Wings Recipe




The Wave: Honey Chicken Wings

Ingredients:
*makes 24 wings

24 raw chicken wings
1 garlic clove
1 cup brown sugar
1 cup soy sauce
1/4 cup honey
cooking oil



Directions:

   Combine the garlic, brown sugar, soy sauce and honey in a medium saucepan. Bring to a boil until sugar and honey have dissolved, stirring constantly. Reduce heat and cook until mixture has thickened. Remove from heat and discard garlic clove.

   Heat 1-inch of oil in a deep skillet. Fry chicken wings until fully cooked and internal temperature reaches 165 degrees. Place wings in a large bowl and pour honey glaze on top. Toss wings in glaze until well coated. Serve immediately. Enjoy!!

Honey Granola Crunch Recipe




    Now that the new year has begun, I've been trying to replace our snacks with healthier options. Here's an easy (and yummy) granola recipe that you can make for your family. Enjoy!



Honey Granola Crunch

Ingredients:
*makes about 8 cups

4 cups old-fashioned rolled oats
2 cups walnuts (or almonds), chopped
1 cup raisins
1 cup dried cranberries (optional)
3/4 cup honey
1/2 cup butter, melted
2 teaspoons cinnamon
1 teaspoon vanilla
dash of salt
1 tablespoon toasted wheat germ (optional)
1 tablespoon ground flaxseed (optional)


Directions:

    Preheat oven to 350 degrees.
  
   Mix all of the ingredients in a large bowl. Spread on foil-lined baking sheet and bake for 12-15 minutes at 350 degrees, stirring every 5 minutes. Let cool completely before storing. Serve over yogurt or in a bowl of milk. Makes a great healthy snack!

Homemade Crock-Pot Applesauce Recipe




    I made some homemade applesauce in my Crock-Pot today so I thought I'd share the recipe with you. It is simple to make and tastes delicious!


Homemade Crock-Pot Applesauce
*makes 32 ounces



Ingredients:

8 - 10 tart apples (I had a bag of 9 small Granny Smith Apples, so I used those)
1/2 cup water
3/4 cup sugar
1 teaspoon ground cinnamon


Directions:

   Peel, core and dice the apples. Place them into your Crock-Pot and pour in 1/2 cup of water. Add in the sugar and ground cinnamon. Set the Crock-Pot on Low and cook for 5 hours, stirring occasionally. Turn off and let cool before transferring to containers for storage. Enjoy!!

   *Tip: Applesauce can also be used in many cake and dessert recipes to reduce the fat and calories by replacing the oil or butter.

Boardwalk Bakery's Brownies are massive and delicious!



Boardwalk Bakery: Brownies
*makes 15 (2x3-inch) brownies


Ingredients:

2 sticks butter, softened to room temperature
2 cups sugar
1 cup light brown sugar
1 cup light corn syrup
6 eggs
1 1/8 cup cocoa powder
6 tablespoons vegetable oil
2 cups all-purpose flour
powdered sugar for dusting (optional)


 


Directions:

   Preheat oven to 350 degrees.

   Cream the butter, sugar and brown sugar together in a large bowl with electric mixer. Add in the cocoa powder and corn syrup. Mix until well blended. Gradually add the eggs, one at a time. Mix in the vegetable oil. Slowly incorporate the flour. Do not overmix.

   Spray a 9x13-inch pan with non-stick spray. Pour batter into pan and spread evenly. The batter will fill the pan completely. Bake 45 - 50 minutes at 350 degrees. It will look like a large chocolate cake when done. Let cool completely before cutting into squares. Dust with powdered sugar. Enjoy the fudgy goodness!!

Tuesday's Travel Tip: An easy way to locate your luggage



     The night before our first trip to Disney I was packing our navy blue luggage when I thought to myself, "How many other pieces of navy blue luggage will be spinning around in that carousel?" I went to our craft closet and found some bright yellow VeggieTales ribbon, I then cut a piece for each of our bags and tied it on the handles.

     I am so glad I did because that bright yellow made it very easy to locate our luggage among the other 60 pieces of navy blue luggage! And even though it has been 7 years since our first trip and the boys are definitely out of the VeggieTales stage, we still like to use the same ribbon because it reminds us of our very first trip to Disney World. :)

    So, I highly suggest finding some kind of distinctive ribbon, maybe even Disney-themed or red and white polka-dot (for Minnie) and tying it to each of your pieces of luggage. Make sure it's not too long, you wouldn't want it getting stuck on the carousel, so maybe just a 12-inch piece or so. Tie it in a secure knot on the handle or somewhere obvious so that you can see it easily. And you can even give your kids the job of spotting the luggage with the ribbons at the airport baggage claim.

Pop Century Resort: Buttermilk Fried Chicken Recipe





Pop Century Resort: Buttermilk Fried Chicken
*serves 4

Ingredients:

8 raw chicken pieces (wings, legs & thighs)
3 cups buttermilk
4 eggs, beaten
3 cups all-purpose flour
4 cups Crisco Vegetable Shortening
Kosher salt
ground black pepper


Directions:

   Place the chicken pieces in a shallow container, skin side down. Pour buttermilk over the chicken. Cover with plastic wrap and marinate in the refrigerator at least 6 hours or overnight, if possible.


   Preheat oven to 375 degrees. Remove the chicken from the buttermilk and season both sides with salt and pepper.


Place the beaten eggs and flour into two separate shallow dishes. Add 1 tablespoon salt & 1 tablespoon pepper to the flour. Stir well.




   Melt the Crisco in a deep frying pan so that it is at least 2-inches deep. Heat it until the oil begins to lightly smoke. Dredge the chicken pieces first in the flour, then the egg, and then the flour again. Place the chicken pieces into the hot oil and fry for 2-3 minutes on each side, until the skin is golden brown. Transfer the pieces to a foil-lined baking sheet and bake in oven for 40-45 minutes, or until cooked through to the bone.



   Serve hot with sides and warm biscuits or dinner rolls. Enjoy!
