Pop Century French Toast with Crumb Topping Recipe

Pop Century French Toast
*serves 4

8 slices thick bread (like Texas Toast)
3 eggs
3/4 cup milk
1/8 teaspoon ground cinnamon
1/4 cup sugar
1/2 teaspoon vanilla extract
1-2 tablespoons butter
Powdered sugar

Whisk together eggs, milk and vanilla. Add in cinnamon and sugar and mix well.

Preheat griddle or pan on medium-high heat. Coat bottom with butter. Dip bread slices in milk/egg mixture and place on hot griddle. Cook until golden brown on each side. Set on serving platter and dust with crumble topping (recipe below) and powdered sugar.

Crumb Topping Ingredients:

1/2 cup brown sugar
1/2 cup all-purpose flour
1/4 cup butter (1/2 stick)

Mix together until crumbs form. Spread on a baking sheet lined with parchment paper. Bake at 350 degrees for 12-15 minutes (watch it carefully so it doesn't burn). Let cool slightly. Break apart any large clumps with a fork or spoon. Sprinkle on top of French toast or any baked item for an extra bit of yummy goodness. ;)
