Kouzzina by Cat Cora: Rolled Baklava Recipe


This is the first time I have ever made baklava or even tasted it.
It was yum! It has a light, crisp exterior and the inside is
filled with the nutty goodness of pistachios and cinnamon;
and the honey adds a delicate sweetness to this bite-size pastry.
They would be the perfect finger food for your next party or holiday gathering.

Kouzzina by Cat Cora (Disney's Boardwalk Resort):
Rolled Baklava
*makes 18 pieces

Syrup Ingredients:

1/3 cup water
1/2 cup granulated sugar
1 tablespoon honey
2 lemon slices
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves

Syrup Directions:

Pour water and sugar into a saucepan. Add in honey, lemon slices, cinnamon and cloves. Stir well to dissolve sugar. Bring to a boil. Lower heat and let simmer for 15 minutes. Remove from heat and set aside to cool.



Baklava Ingredients:

1 cup shelled pistachios
1 tablespoon granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
8 sheets (from 1 package) of phyllo (fillo) dough, thawed
2 sticks (1 cup) butter, melted

Baklava Directions:

Preheat oven to 375 degrees.

Place shelled pistachios into a food processor. Add in sugar and pulse until coarsely ground. Don't over-process or it will turn into paste. Pour the pistachios into a bowl. Add the cinnamon and cloves and stir well to incorporate. Set aside.

   Unroll 1 tube of phyllo dough. Carefuly spread 1 sheet on a clean, flat surface. Cover remaining sheets with plastic wrap so they won't dry out. Melt butter in microwave or on your stovetop. Brush the melted butter over the entire surface of the phyllo dough. Layer a second sheet of dough on top of the first. Butter that one. Repeat this 2 more times. You should now have a stack of 4 buttered phyllo dough sheets.

   Sprinkle the ground nut mixture on top of the phyllo dough. Now gently begin rolling up the dough from the long side. When you get to the end, brush it with butter before sealing. You should have a long roll of baklava now.

   Take a sharp knife and cut 2-inch segments from the long roll. Using a pair of kitchen tongs, dip the rolls into the melted butter and place on a deep baking sheet or dish. Place the pan in the oven and bake at 375 degrees for 25-30 minutes. Watch them because they can burn easily.

   Remove the baklava from the oven and let cool 5 minutes. Ladle the syrup over the baklava. You can also garnish the tops with more of the ground pistachio mixture. Serve on a plate with a dollop of whipped cream and sprinkle of cinnamon. Enjoy!
