Grapefruit Cake Recipe from The Brown Derby at Disney's Hollywood Studios

I'll be honest, when I first heard about a "Grapefruit Cake"
I imagined it would be tart and bitter tasting but I was 100% wrong.
I have never been a fan of grapefruits...until now.
This cake is light and refreshing with a cool citrus taste in every bite.
Add to that the sweet and tangy flavor of the Grapefruit Cream Cheese Frosting
and you have the perfect combination!

Grapefruit Cake from The Brown Derby
*makes one (4 layer) 8 or 9-inch round cake

Cake Ingredients:

1 boxed white cake mix
3 eggs, yolks and whites separated
1/3 cup vegetable oil
1 1/4 cups ruby red grapefruit juice
1/4 teaspoon grated lemon rind
1/8 teaspoon cream of tartar

Cake Directions:

Preheat oven to 350 degrees.

Pour cake mix into a large bowl. Add oil, grapefruit juice, lemon rind and 3 egg yolks. Mix well with a wire whisk. Set aside.

In a second mixing bowl, pour 3 egg whites and cream of tartar. Mix on high with electric mixer until stiff peaks form.

Fold the egg white mixture into the batter until there are no more lumps. Pour evenly into two 8 or 9-inch cake rounds that have been greased and floured or sprayed with non-stick cooking spray. Bake at 350 degrees for 25 - 30 minutes or until the cakes spring back when lightly touched. Remove cakes from oven and cool completely. Slice each cake in half so you have four layers.

Grapefruit Cream Cheese Frosting Ingredients:

12 ounces cream cheese, softened to room temperature
2 teaspoons lemon juice
1 teaspoon grated lemon rind
4 cups powdered sugar
2 tablespoons ruby red grapefruit juice
2 (15 ounce) cans ruby red grapefruit sections, drained

Grapefruit Cream Cheese Frosting Directions:

Beat softened cream cheese with an elecric mixer until fluffy. Add lemon juice and rind. Mix well. Pour in 1 cup of the powdered sugar then blend again. Do this for the 3 remaining cups of powdered sugar, mixing well after each. Add 2 tablespoons of grapefruit juice and blend one last time.

Set aside a few of the grapefruit sections to garnish the finished cake. Dump the remaining grapefruit sections into a medium-size bowl and mash with a potato masher or the back of a fork. Divide the mashed grapefruit into 4 equal containers. Set aside.

Cake Assembly Directions:

Take one layer of cake and place it on your serving platter. Spread one container of the mashed grapefruit on top. Top with a thin layer of cream cheese frosting. Place the second cake layer on top and repeat with a layer of grapefruit and frosting. Repeat this process for the third cake layer. Place the fourth and final layer of cake on top (don't spread grapefruit on this one). Frost the top and sides of the entire cake. Now spread the last of the mashed grapefruit on top of the frosted cake. Chill in fridge at least 1 hour before slicing. Serve with a few grapefruit sections as garnish. Mmmmm. :)

2012 Dates Released for Osborne Family Spectacle of Dancing Lights at Disney's Hollywood Studios

If you've ever visited Disney's Hollywood Studios during the holidays then I'm sure you know how breathtaking Osborne Family Spectacle of Dancing Lights can be, and if you haven't then here's your chance. The millions of glittering lights display will be lit from November 9, 2012 through January 4, 2013.

There is no additional charge for this experience; it is included with your park admission to Disney's Hollywood Studios. Isn't that a wonderful?!

2013 Evening Extra Magic Hours Reduced to 2 Hours

Beginning in 2013, Disney's Evening Extra Magic Hours will be reduced to 2 hours from 3. The Morning Extra Magic Hours will remain the same (1 hour prior to park opening). This information has been confirmed by Disney on their official website and can be read below or by clicking this link.

Extended Disney park hours, known as Extra Magic Hours, offer a rare and unique opportunity to enjoy additional time in Walt Disney World parks—above and beyond the standard operating schedule—at no extra charge. This special perk is offered to Guests of select Walt Disney World Resort hotels, and Residents and Guests of Golden Oak.
Each day, one of the 4 Walt Disney World theme parks opens one hour early or remains open up to 2 hours after regular closing time. Additionally, Disney Water Parks offer Extra Magic Hours during select times of year.
How It Works:
To take advantage of extended park hours, simply visit the designated park at the designated time. Upon check-in at a Walt Disney World Resort hotel, Guests will receive a schedule detailing when each park offers Extra Magic Hours, so you can be sure to plan your stay accordingly.
In addition to the schedule, the following guidelines will help you make the most of Extra Magic Hours:
  • Morning Hours: Arrive up to an hour before the designated park is scheduled to open and show your valid park ticket and Resort ID or Golden Oak ID at the park turnstiles.
  • Evening Hours: A valid theme park ticket and Resort ID or Golden Oak ID are required. Each member of your party will need to present a Resort ID or Golden Oak ID to access evening Extra Magic Hours offerings.

I don't know about you but I am not happy to hear this. We love our Evening Extra Magic Hours and that is one of the main reasons we stay on property. We usually visit during the slow seasons and the parks are not open very late anyway so we've always appreciated the 3 extra evening hours. :( How do you feel about this change?

you know all about the Dole Whip.
It's the ultimate in Disney desserts with
its refreshing pineapple taste and creamy texture.
Now you can enjoy this cool treat anytime you like
with the easy 3-ingredient recipe shown below.

3-Ingredient Dole Whip
*makes 6 cups


3 cups pineapple sherbet, softened
1 (8 ounce) tub Cool Whip or other non-dairy whipped topping, thawed
4 tablespoons pineapple juice, chilled

8-10 drops yellow food coloring


Place 3 cups of the softened pineapple sherbet into a blender. Scoop the entire contents of the tub of whipped topping into the blender. Add the pineapple juice. You can add the food coloring if you like but it is not necessary. Blend on high for 1 minute. Turn off and remove from motor. The whipped topping will remain on top so take a long utensil and fold it into the sherbet on bottom. Now replace the lid and blend again for another minute. Remove and mix by hand one last time. The mixture should now look like a yellowish milk shake.

Take a gallon-size freezer bag and place it into a large cup or bowl. Fold back the edges so you have a wide mouth to pour into. Begin pouring the Dole Whip into the freezer bag, making sure to scrape the sides of the blender. Seal the bag and place in freezer for 2 1/2 - 3 hours until firm but not solid. It should have a soft-serve texture. Remove from freezer and snip off 1 1/2-inch from one of the bottom corners of the bag creating an opening to squeeze out the Dole Whip. Twist the top portion of the bag like it was a cake icing bag and begin squeezing the Dole Whip into your serving cup or dish. Just like soft-serve, right?

If you'd like to turn it into a Dole Whip Float, simply add some of the chilled pineapple juice to your cup of Dole Whip. Serve with a spoon or straw and a tiny umbrella. Now dig in!

*Tip: If you freeze the Dole Whip for longer than 3 hours it will become solid, to return it to the soft-serve stage simply thaw it on your counter for a bit just like you would for a tub of Cool Whip.

Check Out this Cute Idea for a Disney Countdown Calendar

Here is a cute idea I found on Pinterest to help you countdown the days until your next Disney trip. It is really easy to make and inexpensive.

   The instructions for making this calendar can be found on She used the free Mickey head paint swatches you can find at your local Home Depot then stuck magnets on the back of each one. Cut out numbers and pictures of Disney characters were glued to the front. She also added a fun element by sticking a secret activity on the back of each day like: "Eat Mickey Mouse Pancakes". I think it would be fun to put the name of a different Disney movie to watch or a different recipe from The Disney Diner to make each day until your trip. ;)

Disney Dining Plan Changes for 2013

If you are planning on purchasing the Disney Dining Plan in 2013, you may want to be aware of the changes, mainly the price increase. See the details below.

The cost of the 2013 Quick Service Dining Plan will increase to $37.58 (from $34.99) per adult and $14.32 (from $11.99) per child (age 3 - 9). The cost is per night of resort stay.

The cost of the 2013 Basic Dining Plan will increase to $55.59 (from $51.54) per adult and $17.16 (from $15.02) per child (age 3 - 9). The cost is per night of resort stay.

The cost of the 2013 Deluxe Dining Plan will increase to $99.97 (from $85.52) per adult and $26.84 (from $23.79) per child (age 3 - 9). The cost is per night of resort stay.

Other changes that will be implemented in 2013 are:

Le Cellier Steakhouse (Epcot) will require 2 Table Service meals (Signature Dining) regardless if dining there during lunch or dinner.

Landscape of Flavors (Art of Animation Resort) has been added as a Quick Service location.

Be Our Guest Restaurant (opens this fall in Magic Kingdom) has been added as a Table Service location.

Automatic Gratuity may be added to your bill for items ordered not included on the dining plan (ex. alcoholic beverages)

Choosing items from a separate fixed price menu offered at certain location requires payment of a surcharge in addition to redeeming the number of Table Service entitlements required.

Special Dining Events offering special menus at certain Table Service locations are not included.

Disney's policy requiring a credit card hold for certain dining locations that previously required a 24 hour cancellation policy has been changed to allow cancellations by 10pm the night prior to the reservation. The $10 per person cancellation fee still applies if the policy is neglected. Please ask your Disney Dining Reservation Specialist for complete details or check the policies when you book online at

Disney just released the official trailer for their all-new movie: Oz The Great and Powerful. Click below to watch now:

   This prequel film stars James Franco (Spiderman, Rise of the Planet of the Apes) as Oscar Diggs, a circus magician that finds himself in the wonderful and mysterious land of Oz. It also stars Rachel Weisz (The Mummy) and Mila Kunis (Black Swan) as witches. Michelle Williams (My Week with Marilyn) is the kind-hearted Glinda. Sam Raimi (Spiderman trilogy) has taken on the role as director with Joe Roth (Snow White and the Huntsman) producing. It is scheduled to open in theaters on March 8, 2013.

Kouzzina by Cat Cora: Rolled Baklava Recipe

This is the first time I have ever made baklava or even tasted it.
It was yum! It has a light, crisp exterior and the inside is
filled with the nutty goodness of pistachios and cinnamon;
and the honey adds a delicate sweetness to this bite-size pastry.
They would be the perfect finger food for your next party or holiday gathering.

Kouzzina by Cat Cora (Disney's Boardwalk Resort):
Rolled Baklava
*makes 18 pieces

Syrup Ingredients:

1/3 cup water
1/2 cup granulated sugar
1 tablespoon honey
2 lemon slices
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves

Syrup Directions:

Pour water and sugar into a saucepan. Add in honey, lemon slices, cinnamon and cloves. Stir well to dissolve sugar. Bring to a boil. Lower heat and let simmer for 15 minutes. Remove from heat and set aside to cool.

Baklava Ingredients:

1 cup shelled pistachios
1 tablespoon granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
8 sheets (from 1 package) of phyllo (fillo) dough, thawed
2 sticks (1 cup) butter, melted

Baklava Directions:

Preheat oven to 375 degrees.

Place shelled pistachios into a food processor. Add in sugar and pulse until coarsely ground. Don't over-process or it will turn into paste. Pour the pistachios into a bowl. Add the cinnamon and cloves and stir well to incorporate. Set aside.

   Unroll 1 tube of phyllo dough. Carefuly spread 1 sheet on a clean, flat surface. Cover remaining sheets with plastic wrap so they won't dry out. Melt butter in microwave or on your stovetop. Brush the melted butter over the entire surface of the phyllo dough. Layer a second sheet of dough on top of the first. Butter that one. Repeat this 2 more times. You should now have a stack of 4 buttered phyllo dough sheets.

   Sprinkle the ground nut mixture on top of the phyllo dough. Now gently begin rolling up the dough from the long side. When you get to the end, brush it with butter before sealing. You should have a long roll of baklava now.

   Take a sharp knife and cut 2-inch segments from the long roll. Using a pair of kitchen tongs, dip the rolls into the melted butter and place on a deep baking sheet or dish. Place the pan in the oven and bake at 375 degrees for 25-30 minutes. Watch them because they can burn easily.

   Remove the baklava from the oven and let cool 5 minutes. Ladle the syrup over the baklava. You can also garnish the tops with more of the ground pistachio mixture. Serve on a plate with a dollop of whipped cream and sprinkle of cinnamon. Enjoy!

Value Resorts: 2 Rooms or a Family Suite, Which is the Better Deal??

So you want to go to Disney World but you are on a budget and want the best value for your family. The first thing to decide on is where you will stay. If you are family of 5 - 6  you have a few options: (1) Reserve 2 Value Resort rooms, (2) stay in a family suite at Disney's All-Star Music Resort or (3) the brand-new Art of Animation Resort.

   I priced the three resorts for my family (on to help demonstrate. There are four of us plus my mother, making five. I have two teenage sons so we don't spend much time in the room, except for sleeping and showering (and sometimes breakfast). The travel dates I'm using in my examples are December 1 - 8, 2012. I am including 7 days base tickets (no hoppers or water parks) and no dining plan. One son is 18 so will be listed as an adult in the examples shown below.

We'll begin with Disney's Pop Century Resort. I will need 2 rooms to house my family for the week.

Room #2 (Standard Room)

Total price for both reservations = $3189.19

Here is a look at the room floor plans:

   We usually request that both rooms have the double beds (bottom picture) giving us 4 beds total. That way everyone has their own bed w/the exception of me & hubby. We also request that the rooms either have an adjoining door or are at least next to each other. You can make this request in advance by calling in 407-W-DISNEY after you have made both reservations.

   Each room is 260 square feet and includes: a TV, 2 chairs, a small table, vanity area, bathroom, tub, dresser, nightstand and wall safe.

   Now, given the amount of time we will be staying in the room, this is the perfect set up for us. There are 2 full bathrooms and 4 beds.

Next, we'll take a look at Disney's All-Star Music Resort. We'll book one Family Suite at this location. These rooms can sleep up to 6 guests.

Family Suite:
December 1 - 8, 2012

4 Adults + 1 Child
Price: $3307.83

   Now this room is $118.64 more than the 2 rooms at Pop Century and has fewer beds. Take a look at the floor plan below:

   As you can see illustrated above, this room has a Queen bed and a pull-out sofa. There is also a chair/ottoman that converts to a twin-size bed. (I don't know which one of us would be willing to spend a week sleeping in it though.) The family suite is 520 square feet (equal to the 2 rooms at Pop) and also has 2 full baths, 2 TVs, 2 chairs, a table, a desk (in bedroom), nightstands and 2 safes. It differs from Pop in that it also has a mini-kitchen equipped with a microwave and compact fridge.

   Given the increase in price, the age of my sons, the bedding situation and the fact that we eat all of our meals at the parks or resorts, this is not the best deal for us.


Finally, let's look at Disney's Art of Animation Resort. This is the newest resort on property and has been designed specifically to appeal to families traveling to Disney. The Family Suites fully immerse guests into themed rooms from some of Disney's best animated films.

Family Suite (sleeps up to 6 guests):
December 1 - 8, 2012

7 Days Base Tickets
4 Adults + 1 Child
Price: $3693.71

   This package is $385.88 more than the family suite at All-Star Music and $504.52 more than the 2 rooms at Pop. Definitely not the better value for us. Here is a look at the floor plan:

   As you can see, this family suite has a master bedroom with a Queen-size bed, a pull-out sofa and a dining table that converts into a third bed. There are 2 baths, a mini-kitchen, chair, 2 dressers, 2 TVs and a wall safe. It is 565 square feet, making it slightly larger than the family suite offered at All-Star Music.

   Now the main feature of this resort is the whimsically decorated rooms and themed buildings, it's like walking into a Disney movie. But once again, given the age of my children and the amount of time we spend at our resort it can't justify the $500+ increase over 2 rooms at Pop.


Now that you've had a look at the three options, let's ask some questions.

1. How many children will you be traveling with and what are their ages?

This is important for the sleeping arrangements. If you have smaller children then you may fit perfectly fine in one of these family suite floor plans. They may not have a problem sleeping in a convertible sofa or chair for the week. Heck, they may even enjoy it. "It's a Transformer bed, Mom!"

2. How much time will you actually spend in your resort room?

If you have younger children then you may need to come back to your resort for afternoon naps or just to take a little break from the parks. During our first trip, the boys were smaller and it would get extremely hot between 1 and 3 p.m. so we'd return to our resort. But even then we weren't in our room, we were taking a dip in the pool. And now that they're older, we pretty much stay at the parks from open to close.

3. Will you have access to a car?

If you do, then you may want to stay at a family suite and bring your own groceries in. You can store sandwich fixings in the mini-fridge or microwave bowls of oatmeal for breakfast before heading out to a park for the day.

4. Are you on the Disney Dining Plan?

If yes, then you probably won't be needing the mini-kitchen at all since you will be entitled to meals in the parks and resorts.

5. Are you on a budget?

Then you will probably want to go with the most economical choice. As cute as the rooms are at Disney's Art of Animation, can you think of other experiences you can put the extra $500 towards on your vacation? Like going to a character meal or dinner show. Or a princess makeover for your daughter at Bibbidi Bobbidi Boutique. If visiting during the holiday season, you could go to Mickey's Not-So-Scary Halloween Party or Mickey's Very Merry Christmas Party. Or simply split the money up and give each member of your family $100 to spend on souvenirs. And here's my favorite option: put the money away in a "Mickey Jar" and start saving for your next trip. ;)

The Disney Diner Celebrates 1 Year!!!

I was looking at my history and just realized it has been one year since my first post on The Disney Diner (actually it was yesterday 7/6). I can't believe how fast time flies! I remember when I first started I was so excited when 12 people read my blog and now over 500 visit a day. It just amazes me!! It has been such a wonderful experience not only because I get to post delicious Disney recipes and information but also because it has helped with my own Disney addiction and withdrawals. LOL

  I want to thank all of my readers and followers for faithfully visiting the blog. I love hearing feedback and seeing all of your "likes" on Facebook. I am looking forward to this next year with all of you. A few weeks ago, I decided (urged by my son) to begin posting The Disney Diner Episodes on YouTube every Friday. That's what I've done for the past 2 weeks and hopefully if all goes well, I can continue to do so.

  I also want to thank my husband and sons who encouraged me to start this Disney blog. At first I was only going to post the recipes but my (filmmaker) sons said I should start the YouTube Channel and feature them in a cooking show. I didn't think anyone would watch but now we have over 600 subscribers and the number increases daily. So thank you Matt & Drew for pushing me out of my my box. Thanks for taking time to film the show and teaching me how to edit them. A special thanks to my husband Jason for giving me ideas and feedback on the recipes and always volunteering to eat the leftovers. LOL

Friday's Recipe Video: Empire Biscuits (Cookies) from Disney's Brave Movie

Empire Biscuits (Disney's "Brave" Cookies) Recipe

If you saw Disney's Brave movie then I'm sure you remember how eager Merida's triplet brothers were to get their hands on these pastries. While watching the movie, I thought to myself "I don't know what those are but I definitely want to make them". So I came home and did some research. I found out they are Scottish cookies called "Empire Biscuits".

   Now, I'll be honest, after reading the recipe I expected them to be brittle tasteless cookies filled with a tart jam. But I was wrong on so many levels. The cookie part was firm on the outside but moist on the inside and the raspberry preserves are quite sweet. The bit of frosting adds a delicate touch of sugar and then we top it all off with a cherry. Perfection. These cookies are not only easy to make but absolutely delicious. They would make a great addition to any Brave-themed birthday party or even a Wonderland tea party. And my sons liked them so much they came up with a great idea: they suggested they replace Pop-Tarts and Toaster Strudels at breakfast. (I think they are better than both of those because they don't have any preservatives.) Now what kid wouldn't want to start off their day like Merida?

Disney's Brave Empire Biscuits
*makes 9 fully assembled cookie sandwiches

Cookie Dough Ingredients:

1 stick of butter, softened to room temperature
1/2 cup granulated sugar
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 egg
1 teaspoon vanilla extract

Cookie Dough Directions:

Preheat oven to 350 degrees.

   Cream butter and sugar with an electric mixer. Add in baking powder and flour. Mix well. Next, add in the egg and vanilla. Mix on medium-high until sides of bowl are clean and dough begins to form a ball. Remove dough and knead by hand. Form into a ball and place in plastic wrap. Cover and set in fridge to chill 30 minutes.

   Remove chilled dough and place on flour-dusted surface. Roll out to 1/8-inch thickness. Using a shot glass or round cookie cutter, cut into 1 1/2-inch diameter circles. You should have 18 circles. Place them on a parchment-lined cookie sheet 1 inch apart. Bake in preheated oven for 8 minutes at 350 degrees. Remove from oven and let cool on cooling racks. Now move on to the icing.

Icing Ingredients:

1 cup confectioner's (powdered) sugar
1/4 teaspoon almond extract
1-2 tablespoons hot water

Icing Directions:

Place all ingredients into a small bowl and mix well with a spoon, adding hot water as needed until you have a thin, gravy-like consistency. Set aside.

Other Ingredients Needed:

raspberry preserves
maraschino cherries, roughly chopped into quarters

Assembly Directions:

Take one of the cooled cookies and place bottom up on a plate. Top with a tablespoon of the raspberry preserves. Now, set a second cookie on top and gently press down, creating a sandwich. Spoon a dollop of icing on top and spread with the back of the spoon. Finish off with a bit of chopped cherry. Ta-da! That's it, you're done! Wasn't that easy? Now take a bite. Yum, right?
