Starring Rolls Cafe: Chocolate Peanut Butter Cupcakes


Starring Rolls Cafe at Disney's Hollywood Studios
is known for their outrageously delicious cupcakes including
this Chocolate Peanut Butter Cupcake that is loaded with
chocolate morsels, filled with gooey chocolate fudgy peanut butter,
topped with a mountain of creamy frosting and then garnished
with a heap of chocolate curls.
Now you can have this decadent treat at home following this simple recipe.

Starring Rolls Cafe: Chocolate Peanut Butter Cupcakes
*makes about 11 jumbo cupcakes (or 24 standard-size)



Cupcake Ingredients:

1 box Devil's Food Cake mix
3 eggs
oil
water
1 cup semi-sweet chocolate morsels


Cupcake Directions:

   Preheat oven to 350-degrees.

   Mix cake mix with eggs, oil and water according to directions on back of box. Fold chocolate morsels into batter. Pour into paper-lined cupcake pans. Bake according to package directions at 350-degrees. Let cool 5-6 hours or overnight before attempting next step.

   Take a sharp knife and cut a 1-inch deep circle into the center of each cupcake, creating a pit (for filling). Carefully remove the cut piece of cupcake and set aside. Do not discard or eat it, you will be needing it later. Do this for each cupcake.



Chocolate Peanut Butter Frosting Ingredients:

2 tubs ready-made Chocolate Fudge flavored frosting
1 cup creamy peanut butter

Chocolate Peanut Butter Frosting Directions:

   Scoop out frosting and peanut butter into a large mixing bowl and mix with an electric mixer on medium-low for a few minutes until creamy and well blended.

   Fill a gallon-size freezer bag with some of the frosting. Cut off the bottom corner to create an opening. Hold the bag in your hand and squeeze the frosting into the pit of the cupcake to just above the edge. Take the small piece you cut out earlier and replace on top of the filled hole but invert it so that the peak is now facing upwards.

   Now take the bag of frosting and swirl it around the top of the cupcake, building up as you circle it until the peak is completely covered. Set aside while you shave your chocolate curls (recipe below).

   Place the chocolate curls randomly on the cupcake sticking them into the frosting to adhere. Put enough curls on so that the frosting is completely covered.



Chocolate Curls Ingredients:

   1 (16 ounce) bag semi-sweet chocolate morsels
   1 tablespoon vegetable oil

Chocolate Curls Directions: (this should be done sometime prior to making your cupcakes)

   Line a bread loaf pan with plastic wrap. Set aside.
 
   Place the chocolate morsels in a microwave-safe bowl. Add the oil. Heat on medium heat in 30 second increments until melted, stirring occasionally. Or you can use a double-boiler on the stove to melt them. Then pour the melted chocolate into the lined loaf pan and set in the freezer for one hour.

   Remove from freezer. You will now have a giant chocolate bar. Wrap the bar in plastic wrap and store in pantry. When ready to use, shave large curls with a vegetable peeler or sharp knife.
