Flame Tree BBQ: Barbecue Sauce Recipe


Flame Tree BBQ: Barbecue Sauce
*yields 1 1/2 cups

Ingredients:

1 cup ketchup
1/4 cup rice wine vinegar
1/4 cup water
1/4 cup light brown sugar
2 tablespoons molasses
1 tablespoon worcestershire sauce
1 tablespoon chili powder
1 tablespoon paprika
2 tablespoons onion powder
1 teaspoon ground tumeric
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon ground cloves


Directions:

   In a large saucepan, combine the ketchup, rice wine vinegar and water. Add in the brown sugar, molasses, worcestershire sauce, chili powder, paprika, onion powder, tumeric, cumin, garlic powder and ground cloves. Stir well.

   Bring this mixture to a simmer over medium heat for 5 minutes. Then reduce heat to low and cook for 30 more minutes, stirring often, until thickened. Brush on meat or poultry or use as a dipping sauce.

  *Can be stored covered in refrigerator for up to 2 weeks.

Walt Disney World 40th Anniversary Events at Magic Kingdom

    This Saturday, October 1st, will mark Magic Kingdom's* 40th Birthday. To celebrate this special occasion, Walt Disney World will be holding several events throughout the day as well as a parade, fireworks and merchandise.

   Beginning at 9:45 a.m. the special parade commemorating the event, complete with Disney Characters will emerge from the Main Street Train Station and travel towards Cinderella's Castle. The Characters will then join Walt Disney World President, Meg Crofton alongside Disney Cast Members with 40 years of experience.


   The official ceremonies begin at 10:00 a.m. on the Castle Forecourt Stage with singers, dancers and a special performance by the Dapper Dans Barbershop Quartet. The event will finish off with an eruption of daytime fireworks.


   There will be Artist Signings held at 2 locations: Diamond Horseshoe and Uptown Jewelers. The schedule follows:

Tuesday's Travel Tip: Ready, Set, GLOW!!!

    Imagine, you are all settled in your prime viewing spot with your family, anxiously awaiting the start of the Main Street Electrical Parade, when all of a sudden you see it coming...that vividly bright, glowing souvenir cart slowly emerging from the darkness with every form of blinking, spinning, flashing bit of neon known to man. And in unison, you hear your children first gasp in awe, then ask "Can we get one?" (The "we" meaning, of course, one for each of them).



   You wisely advise them to stay put while you go over and inquire about the prices which range anywhere from $8 - $16 and your knowledge of basic multiplication quickly tells you that you may have to hand over husband's entire wallet (and matching belt) in order to make everyone happy.

   So, how do you avoid this scene? With a little pre-planning and a surprise attack. :D

   Right before your trip to Walt Disney World pay a visit to your local dollar store (like Dollar Tree) or Walmart and stock up on every type of glow stick, bracelet and necklace they sell (you can even find them sold in bulk on Amazon). You will spend way less as these items are typically sold for $1 and often you will get several necklaces and bracelets in one package. You will also usually find 2 glowsticks in a pack. And with all the Halloween decor in the stores right now, this is the perfect time to purchase them (the day after Halloween is even better = SALE!).




   Don't even mention this to your kids beforehand. Just wait until you are all situated in your parade-viewing spot then whip them out of your purse, backpack or bag. They will be so surprised and excited! Let them help bend them to activate the glowing and they will be so mesmerized that they probably won't even notice when that glow cart comes around. And even if they do, they will be completely decked out in glow jewelry from head to toe that they won't even care. They'll be so excited, especially when they see Tinker Bell with her glowing wand that looks similar to theirs! :)

Cape May Cafe: Bread Pudding Recipe



Cape May Cafe: Bread Pudding


Ingredients:

4 cups Texas Toast (or other thick-sliced bread), cubed
3 whole eggs
2 cups milk
1/2 cup sugar
2 teaspoons vanilla extract
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup golden raisins


Directions:

   Preheat oven to 350-degree. Spray the bottom of a 9 x 13" cake pan or casserole dish. Pour in bread cubes and spread evenly. In a large mixing bowl, combine eggs, milk, sugar, vanilla, salt and cinnamon. Mix well with a wire whisk or electric mixer set on low speed. Pour liquid mixture over bread cubes and stir with a large spoon to make sure each cube is coated. Let sit for 5 minutes to allow bread to soak up liquid.


   Place in oven and bake for 25 - 30 minutes, or until knife inserted into center comes out clean. Remove from oven and let cool on counter at least 5 minutes. Serve warm as is or with a scoop of vanilla ice cream on top. Enjoy!!

Disney + Avatar = Pandora in Animal Kingdom


    In case you haven't heard, there was a press conference today announcing the collaboration between Walt Disney Parks and Resorts, James Cameron's Lightstorm Entertainment and Fox Films. They are in the beginning planning stages for a Pandora-themed section of Animal Kingdom Park.


   Here is the info as posted by The Disney Parks Blog:


    James and his producing partner Jon Landau and their team at Lightstorm Entertainment will serve as creative consultants on the project and will work side-by-side with our Walt Disney Imagineers as we dream up experiences that will take our guests deep into worlds of AVATAR like never before. There are also two sequels to the record setting first film in the works, which will offer more fascinating stories, characters and locations to explore in the AVATAR universe. Disney’s Animal Kingdom at Walt Disney World Resort is planned as the site of the first AVATAR-themed land with construction expected to begin by 2013.

   We believe Disney’s Animal Kingdom is a great fit for this project because it was created to give guests the opportunity to experience the worlds of animals and nature – real and mythical – in new ways. Disney’s Animal Kingdom also celebrates adventure, living in harmony with nature and environmental stewardship – themes that are deeply rooted in the story of AVATAR.


   
   I'm not quite sure how I feel about this news yet. I don't know how well they mesh together other than the fact that both are geared toward being "green". Although I know Disney Imagineers will do a beautiful job of capturing every detail of Pandora's fantasy world. I guess we'll just have to see what's in store as details are released. After all, at one time there were plans to have a "Beastly Kingdom" in Animal Kingdom full of mythological creatures (you can still see the dragon on AK's logo, just check out the picture below).

Tuesday's Travel Tip: Child Height Requirements for Rides and Attractions

    

   When planning your trip to Walt Disney World you may want to check the current height requirements for certain rides and attractions. Nothing would be worse than having your child anticipating a ride for months, only to find out they don't meet the child height requirement once you arrive at the line. :(

    So here's a tip to help you plan. The first thing you will need to do is measure your child's height. Then follow the steps below:

    Disneyworld.com has a great search feature to find the rides and attractions your child qualifies for. Simply go to http://www.disneyworld.com/, then hover your mouse over the "Things To Do" tab to highlight it (don't click on it), a menu will appear below and now you will click on the "Attractions" link.

   This link will take you to a page with the listing of all WDW rides and attractions. On the left you will see "Narrow Your Search" options. Scroll down and expand the "Height" box. Now just check off the box that matches your child's current height. The rides/attractions list will now reload with ones that your child can ride. Isn't that fantastic?! No more guessing! (You can also narrow this list by location and recommended ages by checking the appropriate boxes on the left.)

Le Cellier: Cream Cheese Mashed Potatoes Recipe







Le Cellier: Cream Cheese Mashed Potatoes

Ingredients:

5 pounds Russet potatoes, washed, peeled and cut into large chunks
1/2 cup unsalted butter, softened to room temperature
8 ounces cream cheese, softened to room temperature
3/4 cup milk*, warmed in microwave or on stovetop
1 tablespoon Kosher salt
1/2 teaspoon ground black pepper


Directions:

    Boil cut potatoes in a large pot with enough water to cover them. Cook until tender. Drain water and place potatoes in large mixing bowl.

   Mash potatoes using a potato masher or blend on low using an electric mixer. Add in the softened cream cheese, butter, warm milk, salt and pepper to taste. Mix on low until all ingredients are well incorporated.

  *For creamier potatoes, add more milk, 1 tablespoon at a time then blend or stir.

Tuesday's Travel Tip: Stay Hydrated



   One of the easiest ways to spoil at day at the parks is by letting your kids (or yourself) get dehydrated. Believe me, I know, it happened to us on our very first trip to Walt Disney World. It was mid-May and the afternoons were very hot. With all the hustle and bustle of trying to do and see everything we weren't drinking enough liquids and started to feel that antsy, dizzy feeling. We then had to take a break and head back to our resort for an afternoon break of swimming and relaxing in the room.     

   So by the time our second trip to WDW came around, I was well prepared. I made sure to pack plenty of those little pouches of Gatorade powder to pour into our water. We also took our own sports bottles into the parks. We either refilled them at the water fountains or asked for cups of ice water at the quick service dining locations (which they gave us for free). There are also plenty of carts and kiosks selling cold bottled water and Powerade throughout each park. And if you are on the Disney Dining Plan you can use your snack entitlements on them.

   I also saved money specifically to purchase each of my sons a Disney World souvenir squirt bottle/fan that they could wear on their neck and cool themselves throughout the day and they were especially useful when we were sitting in the heat waiting for the next parade. They were well worth the investment.

   And while you are making sure the rest of your family stays hydrated, don't forget yourself. If you are thirsty then you are already dehydrated. Make sure you keep drinking plenty of water (avoid drinking too many sodas) and don't let it get to that point.

  These are just a few of my tips to better your Disney experience. If you're anything like me, you want every moment of your vacation to be enjoyable for your family. ;)

New Character Lunch at Tusker House Beginning December 4th!!


    Tusker House at Disney's Animal Kingdom will be offering a character lunch* beginning December 4th, 2011. Donald's Dining Safari Lunch** will feature Donald Duck, Daisy Duck and Pals.

    The lunch buffet offers a menu inspired by the flavors of Africa with items like all-you-care-to-eat rotisserie chicken, spit-roasted carved beef, curry chicken, fish, salads, stews and even spiced tandoori tofu for vegetarians. Adults can enjoy a glass of South African Wine or Safari Amber Brew. On the children's buffet you will find: chicken, macaroni and cheese, PB & J plus much more. There are also many tantalizing desserts to choose from, including banana-cinnamon bread pudding.

Hidden Mickey Monday #8


   Today's Hidden Mickey can be found in Disney's Wilderness Lodge. There is a large fireplace in the resort lobby in front of Whispering Canyon Cafe. Look up near the top right of the rock fireplace and you will see a Hidden Mickey camouflaged in the rocky texture. See below image.

Flame Tree BBQ: BBQ Dry Rub Recipe



Flame Tree BBQ: BBQ Dry Rub
*makes 4 1/2 cups


Ingredients:

4 cups Sugar
1/4 cup Seasoning Salt
2 tablespoons Paprika
2 tablespoons Chili Powder
2 tablespoons Ground Black Pepper
2 teaspoons Garlic Salt
2 teaspoons Onion Powder
1 tablespoon Ground Cumin

Directions:

   Mix all ingredients in a large bowl or gallon-size freezer bag. Rub over raw meat until completely coated. Place meat in refrigerator at least 1 hour prior to cooking.





Boma: Frunch Recipe



Boma: Frunch
*serves 8

Ingredients:

1 and 1/2 cups Mango Juice
1/2 cup frozen Pineapple Juice (from concentrate), thawed
1/2 cup frozen Lemonade (from concentrate) thawed
2 cups fresh Orange Juice
3 cups cold Water
4 tablespoons Grenadine


Directions:

   Mix all ingredients in a large pitcher. Chill in refrigerator at least 1 hour. Serve cold.

Starring Rolls Cafe: Butterfinger Cupcakes Recipe

     The Butterfinger Cupcake is another one of Disney's genius inventions! Rich chocolate cake is topped with whipped vanilla buttercream, then coated with a layer of chocolate-coating that has been dusted with crushed Butterfinger Candy Bars. And as if that wasn't good enough, they added a surprise inside. Buried deep within the cupcake you will find a sweet fudge filling that is just waiting for you to bite into it. This scrumptious treat will definitely satisfy any chocolate monster.



Starring Rolls Cafe: Butterfinger Cupcakes
*makes 10-12 jumbo cupcakes


INGREDIENTS

Cupcakes:
1 standard Chocolate Fudge or Devil's Food Cake Mix
3 eggs
water
vegetable oil
cupcake liners


Fudge Filling:
1 tub pre-made Chocolate Fudge Frosting
1 pastry bag or gallon-size freezer bag


Buttercream Icing:
1 stick butter, softened to room temperature
1 cup Crisco Vegetable Shortening
2 teaspoons vanilla extract
4 cups powdered sugar
2 - 4 tablespoons milk
1 pastry bag or gallon-size freezer bag


Chocolate Coating:
16 ounces chocolate chips
1 tablespoon vegetable oil


Butterfinger Topping:
5 - 6 (full-size) Butterfinger Bars, finely crushed


DIRECTIONS:

STEP 1: Mix cake batter according to package directions*. Spoon batter into a paper-lined, jumbo-size cupcake or muffin pan**. Bake 18-20 minutes or until toothpick inserted in center comes out clean. Remove from oven and let cool at least 5-6 hours.

*The cupcakes can be made the day prior then cooled overnight. **For smaller cupcakes, use a standard-size cupcake pan and bake according to time indicated on cake mix package. This method will yield about 24 standard-size cupcakes.


STEP 2: After the cupcakes have cooled, take a sharp knife and cut out a 1-inch deep, 1-inch diameter circle out of the center of each cupcake. Carefully remove the center plug with the help of a large spoon. Save the plugs you removed for later.


STEP 3: Scoop the pre-made (store-bought) fudge frosting into a gallon-size freezer bag. Cut off the tip. Squeeze the frosting into the hole you previously cut out of each cupcake. Fill it up to just above the rim. Take the plug and replace it on top of the hole, inverted so that the peak is now facing upwards. Repeat this for all cupcakes and set aside.


STEP 4: Make the Buttercream Icing. Place the softened butter, Crisco and vanilla extract in a large mixing bowl and beat until creamy. Add in the powdered sugar, 1 cup at a time, mixing well after each. After all 4 cups have been blended well, add in the 2 - 4 tablespoons milk. Beat again until the icing is a whipped, spreadable consistency.


STEP 5: Scoop the buttercream icing into a gallon-size freezer bag and cut off the tip. Squeeze the icing in a spiral pattern around the peak of each cupcake until completely covered. Take a small spatula or butterknife and spread the icing until somewhat smooth. Repeat for all cupcakes then set aside.


STEP 6: Place 5-6 Butterfinger Bars in a food processor and process until finely ground. If you do not have a food processor, you can place the candy bars in a gallon-size freezer bag and crush using a rolling pin or back of a skillet. Do this until finely crushed. Pour the crumbs onto a large platter or bowl and set aside.


STEP 7: Place the 16 ounces of chocolate chips and 1 tablespoon of vegetable oil in a microwave-safe bowl. Heat at 50% power for 30 second increments until melted, stirring occasionally.


STEP 8: Using a large tablespoon, pour the melted chocolate over the top of the buttercream icing. Spread the chocolate using the back of the spoon until all of the white has been completely covered.


STEP 9: Immediately after coating with the melted chocolate, sprinkle the Butterfinger crumbs over the cupcake. The crumbs will stick to the melted chocolate.

STEP 10: Let cupcakes cool on counter or in refrigerator until chocolate shell has hardened.

Serve with a tall glass of cold milk and plenty of napkins!! :)

Boardwalk Bakery: Cheesecake Brownies
*serves 12


Brownies (bottom layer)

Ingredients:

2 cups sugar
1 and 1/4 cups all-purpose flour
2/3 cup cocoa powder
1/2 teaspoon baking powder
1 and 1/2 teaspoons salt
5 eggs
2 sticks butter, melted
1/2 cup semi-sweet chocolate morsels

Directions:

   Preheat oven to 350-degrees. Grease a 13 x 9" baking pan. In a large bowl, sift together flour, sugar, cocoa powder, salt and baking powder. Slowly add eggs, one at a time to the flour mixture using an electric mixer on low. Scrape sides of bowl and continue mixing until smooth. Add the melted butter and blend on low. Do not overmix. Using a large spoon or spatula, fold in the chocolate morsels.

   Pour into prepared pan and bake at 350-degrees 25 - 30 minutes or until toothpick inserted into center comes out clean. Remove from oven and let cool completely.


Cheesecake (top layer)

Ingredients:

3/4 cup sugar
3 tablespoons cornstarch
4 (8 ounce) bricks of cream cheese, softened
1 tablespoon lemon juice
2 teaspoons vanilla extract
2 eggs
2 tablespoons heavy cream
2 tablespoons sour cream


Directions:

   Preheat oven to 325-degrees. In a large bowl, cream together sugar, cornstarch and cream cheese with an electric mixer. Add lemon juice and vanilla extract. Add eggs, one at a time until well blended, scraping sides of bowl occasionally. Fold in heavy cream and sour cream.

   Pour this batter over the layer of cooled brownies. Replace into oven and bake for 55 - 60 minutes. Remove from oven and let cool on counter completely. Refrigerate at least 1 hour before serving. Top with a dollop of whipped cream and enjoy!

Hidden Mickey Monday #7


   Today's Hidden Mickey is located in Disney's Hollywood Studios. The Coke Cool Set is right across from the entrance to the Studio Backlot Tour and that is where you will find these stage lights with small yellow Hidden Mickeys on them (see below image).
