Boma (Animal Kingdom Lodge): Chicken Corn Chowder Recipe

Boma (Animal Kingdom Lodge): Chicken Corn Chowder
*Serves 4


2 boneless, skinless chicken breasts, cooked and cubed
2 large Russet potatoes, baked and cubed
2 cups frozen corn kernels
2 (15 ounce) cans chicken broth
1 cup heavy cream
1 cup milk
1 chicken bouillon cube
1 tablespoon sugar
1/2 onion, diced
1 red bell pepper, diced
2 tablespoons Frank's Red Hot Sauce
3 tablespoons parsley, fresh chopped or dried


   In a large stock pot, bring chicken broth to a boil. Reduce heat and add milk, heavy cream, chicken, potatoes, peppers, onion, corn, bouillon cube and sugar. Simmer 40 minutes on medium-low. Add in hot sauce and parsley. Simmer on low another 5 minutes. Serve hot with bread for dipping.

Pinocchio's Village Haus: Figaro Fries Recipe

Figaro Fries were a well-known and extremely popular snack
offered at Pinocchio Village Haus in Disney's Magic Kingdom.
Sadly, they have been discontinued. :( 
But now you can enjoy them at home following this easy recipe!

Pinocchio Village Haus: Figaro Fries
*serves 2


4 slices bacon, cooked until crispy, then crumbled
2 - 3 handfuls of shoestring french fries, frozen
vegetable oil, for frying
1/2 cup of prepared cheese sauce, jarred or canned
2 tablespoons milk
1/2 cup diced tomatoes
1 cup shredded lettuce
Ranch dressing, to your liking
salt, for the fries


    Pour vegetable oil into a pan until 1-inch deep. Cook fries in hot oil until time indicated on package. While fries are cooking, heat 1/2 cup of cheese sauce in saucepan with 2 tablespoons milk. Stir continuously until smooth. Set aside.

   When fries are finished cooking, place on a plate lined with paper towels to drain. Salt to taste. Divide fries into two serving bowls and cover with melted cheese sauce. Top with a layer of shredded lettuce. Drizzle Ranch dressing on top and finish off with crumbled bacon and diced tomatoes. Enjoy with a friend!

Mickey's Not So Scary Halloween Party: Happy HalloWishes Fireworks Video

   As much as I love Mickey's "Boo to You" Parade during Mickey's Not-So-Scary Halloween Party, I would have to say that "Happy HalloWishes" is by far my favorite part of the event. Halloween-themed music accompanies this beautiful display of fireworks making it a perfect ending to a perfect night.

Mickey's Not So Scary Halloween Party: Mickey's Boo to You Parade Video

   If you've never been to Mickey's Not-So-Scary Halloween Party then you will definitely want to plan on going during your next trip to Walt Disney World. It is a spectacular way to celebrate Halloween with your family and friends!

   My family and I attended the party during late September 2008 and it was one of our most favorite trips (besides Mickey's Very Merry Christmas Party in December 2009). We all dressed in costumes (along with most other adults in the park) and enjoyed the fun and festivities.

   During Mickey's Not-So-Scary Halloween Party nights, you will see Mickey's "Boo to You" Parade with all of your favorite Disney characters in costume. The parade kicks off in Frontierland with The Headless Horseman.

Liberty Tree Tavern: New England Pot Roast Recipe

Liberty Tree Tavern: New England Pot Roast
 *serves 4-6


3 tablespoons butter
3 tablespoons all-purpose flour
1 tablespoon garlic, minced
2 cups carrots, peeled and diced
1 cup onion, diced
2 stalks celery, diced
1 teaspoon thyme
2 cups button mushrooms, sliced
5-6 pound beef chuck roast
4 cups beef broth
2 (15 ounce) cans, diced tomatoes
1 cup Burgundy wine
1 pouch/packet brown gravy mix
salt and pepper, to taste


   In a large stockpot, add butter and brown meat on all sides. After browning, remove roast and set aside. Reduce heat to medium and add flour to pan drippings. Stir continuously forming a roux. Add the burgundy wine, beef stock, brown gravy mix, canned tomatoes, diced carrots, celery, onions and mushrooms. Bring to a boil and let vegetables cook 8-10 minutes.

   Reduce heat to low. Add in thyme, salt and pepper. Replace the meat back into the pot, cover, and let simmer for 1 hour. Meat will be tender and sauce will be thick. Serve over a mound of freshly made mashed potatoes.

Whispering Canyon Cafe: Strawberry-Banana Bread Recipe

Whispering Canyon Cafe: Strawberry-Banana Bread
*makes 2 loaves


2 sticks butter, softened
2 cups sugar
6 medium bananas, peeled and mashed
14 ounces, frozen sliced strawberries, thawed
4 eggs
1 teaspoon salt
2 teaspoons baking soda
3 cups all-purpose flour


   Preheat oven to 325-degrees. Grease and flour two loaf pans. In a large mixing bowl, place softened butter and sugar then cream using an electric mixer. Add the mashed bananas and mix well, scraping the sides of bowl with spatula occasionally. Add the eggs, one at a time, mixing well after each. Set bowl aside.

   In a separate bowl, mix the salt, baking soda and flour. Add this flour mixture to the banana mixture and stir until well blended together. Stir in the thawed strawberries. Pour the batter into the prepared loaf pans and bake for 65 - 70 minutes or until toothpick inserted in center comes out clean. Let cool in pans at least 30 minutes then invert carefully onto serving plates.

Kona Cafe: Tonga Toast Recipe

Kona Cafe at Disney's Polynesian Resort is best known for their Tonga Toast.
They take a big hunk of sourdough bread, stuff it full of bananas, dip it in batter,
lightly fry it until it's golden brown then roll it in a mixture of cinnamon sugar.
Think French toast to the extreme.
And now you can enjoy this insanely delicious breakfast dish at home
following this easy recipe. Enjoy!!

Kona Cafe: Tonga Toast
*serves 2

Cinnamon-Sugar Ingredients:
3/4 granulated sugar
2 teaspoons ground cinnamon

Cinnamon-Sugar Directions:

Mix cinnamon and sugar in a shallow dish with spoon until well blended. Set aside.

Batter Ingredients:

4 whole eggs
1 1/3 cups milk
1/4 teaspoon ground cinnamon
1 tablespoon granulated sugar

Batter Directions:

Whisk all ingredients together in a large bowl. Set aside.

Tonga Toast Ingredients:

2 thick slices of sourdough bread, cut 3-inches thick
1 banana
canola oil, for frying

Tonga Toast Directions:

Heat 2 inches of canola oil in a deep frying pan until 350 degrees (or sizzles when a crumb of bread is dropped into it).

Using a sharp knife, cut a 2-inch pocket in one side of each bread slice. Slice each unpeeled banana in half crosswise, then slice again lengthwise. You should now have 4 slices of banana. Remove the peels and stuff two slices into each pocket of bread.

Dip one of the stuffed bread slices into the batter and let it soak up liquid for a few seconds, turning to coat all sides. Place in hot oil and fry on both sides until lightly browned, about 3 minutes per side. Drain on paper towel-lined plate. Immediately place in the cinnamon-sugar mixture and coat all sides. Top with butter and syrup or fresh fruit and whipped cream. Serve warm with a side of crispy bacon or breakfast ham. Yum!

Things to do in Downtown Disney: Characters in Flight by Aerophile

   Looking for something to do while you are visiting Downtown Disney? Try "Characters in Flight", a giant tethered balloon that will take you 400 feet above the earth for a breathtaking 360-degree view of Walt Disney World.

   The surface of the balloon has the silhouettes of some of Disney's most beloved characters: Mary Poppins, Aladdin, Dumbo, Peter Pan, Wendy and Tinker Bell. It is attached to a 19-foot gondola with room for 29 guests and the pilot. You will ascend into the sky for 8-10 minutes of spectacular views.

Hours of operation:
10 a.m. to midnight, daily (weather permitting)

Adults (guests ages 10 and up): $18
Children (guests ages 3 - 9) $12
Guests 2 and under are free

*Tickets may be purchased at the attraction's ticket window

Guests under 12 years of age must be accompanied by an adult.
Gondola is wheelchair accessible with assistance. Guests must transfer from an Electric Convenience Vehicle Weather conditions determine the number of Guests who may board the gondola in any given flight.

Select WDW Restaurants Extending Hours 9/18 - 9/27

   Due to the popularity of the Free Dining Plan Promotion during the month of September, Walt Disney World has extended the operating hours for select table service restaurants to help accommodate guests.

Here is the list of locations with extended hours during the following dates: 9/18/11 - 9/27/11:

'Ohana at the Polynesian Resort will extend breakfast one hour until noon.

Whispering Canyon Cafe at Wilderness Lodge will begin serving dinner one hour earlier at 4 p.m.

Garden Grill at Epcot will extend dinner one hour later until 9 p.m.

Chef Mickey's at the Contemporary Resort will extend breakfast until 12:30 p.m. and will start serving dinner one hour earlier at 4 p.m.

Mickey's Backyard BBQ at Fort Wilderness Resort & Campground will be open for dinner on Tuesday nights, September 20 and 27.

Sci-Fi Dine-In Theater: Mac & Cheese Recipe

Sci-Fi Dine-In Theater: Mac & Cheese
*Serves 4 - 6


3 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 cups milk
10 slices orange American cheese
1 teaspoon yellow mustard
3 cups rotini pasta
1 1/2 cups cheddar cheese, grated
Salt and Pepper, to taste


   In a large saucepan, melt butter on medium. Add flour and cook 5 minutes, stirring constantly until it forms a roux. Heat milk in microwave just until hot then slowly whisk it into the roux. Simmer 10 minutes until thickened, stirring constantly. Add sliced cheese and yellow mustard. Blend well until cheese has melted. Do not boil. Season with salt and pepper.

  In a separate pot, cook pasta according to package directions. Drain well and rinse under cold water. Mix cooked pasta with cheese sauce, stirring well to coat. Pour into a casserole baking dish and sprinkle top with remaining grated cheddar cheese. Broil in oven until cheese melts and top is lightly browned. Serve hot and eat while watching your favorite Disney movie!
