Rose & Crown Pub & Dining Room: Chocolate Guinness Cake
*serves 8


1 stick unsalted butter, softened
2 1/2 cups brown sugar
6 eggs
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
2 cups Guinness Stout
1/2 cup cocoa powder


    Preheat oven to 275°.

    Spray two 9" or 10" round cake pans with non-stick cooking spray (or line bottoms with parchment paper). Cream butter and brown sugar in a large bowl with electric mixer. Gradually add in eggs.

    Sift flour, baking powder and baking soda in a separate bowl. In a smaller bowl, stir Guinness into cocoa powder. Fold in alternate quantities of the flour and cocoa mixtures into the butter/brown sugar. Mix well until incorporated. Pour into the two prepared cake pans and spread evenly. Bake for 1 hour and 30 minutes at 275°. Let cool in pans for 5-10 minutes before turning out onto cooling racks. If you like you can dust tops of cakes with powdered sugar before serving.
