Beach Club Resort: Gingerbread Cookies


1 stick plus 2 tablespoons unsalted butter
2/3 cup granulated sugar
1/2 cup corn syrup
1/3 cup milk
3 cups bread flour
2/3 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon ground cloves


    Place butter, sugar, corn syrup and milk in a saucepan. Heat until it turns into a smooth paste, stirring constantly. Remove from heat. 

   In a separate bowl, sift bread flour, baking soda and spices and mix. Add to the butter mixture and knead until well incorporated.

   Line a cookie sheet with parchment paper. Dust the paper with flour and place dough on top. Flatten the dough then cover with plastic wrap and let refrigerate overnight.

   Dust your working surface with flour. Roll out a small portion of the dough to 1/16 inch thick (keep the remaining dough that you are not working with in the refrigerator). The dough will feel sticky, but don't be tempted to add in additional flour. The flour used in rolling the dough will be enough. Too much flour will make the cookies hard and unpleasant tasting.

   Cut out cookies using cookie cutters and place on parchment-lined baking sheets. Bake at 400° for about 10 minutes until they are rich brown in color.

    Cool completely then decorate with icing (if you wish). Enjoy!!

  3. I've been searching online for the Disney Gingerbread Mickey recipie...hands down the best gingerbread every. It was published in their "Cooking with Mickey" cookbook and years ago, I had a friend who was a baker for Disney who confirmed it was what they used. (Unfortunately I lost contact with him years ago.) I hate to say, but this is not it. Their recipe calls for cardamom...however, from what I remember, yours has been the most similar. It's so frustrating to have lost my absolute favorite cookbook!!
