Sci-Fi Dine-In Theater: Artichoke-Spinach Dip


1 pint heavy cream
6 ounces chopped spinach, fresh or frozen
2 ounces Swiss cheese
2 cloves garlic, minced
1/2 teaspoon Kosher salt
11 ounces artichoke hearts, canned
1 cup Monterey Jack cheese (set aside 1/2 cup for topping)
2 ounces Asiago cheese
2 roasted red peppers, chopped
1/4 teaspoon white pepper


     Preheat your oven's broiler.

    Heat the heavy cream in a saucepot until it has reduced by half. While it is reducing, chop the artichokes, spinach, garlic and red peppers. Set aside. After the cream has reduced, add in the 1/2 cup of Monterey Jack and remaining cheeses a little at a time, until completely melted. Now add all the chopped vegetables and seasonings. Simmer on low 3-5 minutes.

   Remove from heat and pour into an oven-safe dish. Top with remaining 1/2 cup of Monterey Jack cheese and place under broiler until golden brown. Remove and serve hot with multi-colored tortilla chips or crackers.
