Liberty Tree Tavern: Turkey Gravy
2 quarts turkey or chicken broth
1/2 cup celery, diced
1/2 cup onions, diced
1 cup all-purpose flour
2 sticks unsalted butter
1 cup diced turkey (not deli-meat)
Kosher salt, to taste
pepper, to taste
Heat butter in a large pot until melted. Add in diced onions and celery. Saute until tender and onions are translucent. Add in the flour, stirring constantly. Once the mixture turns a light peanut butter color you have created a roux, now add in the broth. Stir well and bring to a simmer. Pour in the diced turkey. Salt & pepper to taste. Remove from heat.
Now you will need to puree the gravy. You can either pour it into your blender or use a hand blender (if you own one) and a large bowl. Puree until smooth. Pour into your gravy boat/dish and serve hot over roasted turkey and mashed potatoes.
