Boma: Potato Bacon Soup Recipe

Boma: Potato Bacon Soup

4 slices bacon, cooked until crisp then chopped
2 tablespoons bacon grease
1/2 cup onions, diced
2 tablespoons all-purpose flour
1 cup white wine
1 cup chicken broth
1 cup heavy cream
1 cup milk
1/2 teaspoon nutmeg
salt and pepper, to taste
2 large Russet potatoes, peeled, cubed and blanched
scallions, for garnish

Cook bacon strips until crispy, then remove from pan and drain on paper towels. Save bacon grease. Let cool then chop and set aside for garnish. Add chopped onions to the bacon grease in pan and cook until caramelized. Add flour to make a roux. Cook until golden brown.

Pour in white wine and cook until reduced by half. Add chicken stock, milk, heavy cream, nutmeg and potatoes. Salt and pepper to taste. Stir well. Now you can either use a hand blender or pour the soup into your stand blender and puree until the soup has a creamy smooth consistency.

Pour into bowls and garnish with bacon and scallions. Serve hot with bread for dipping. Enjoy!

  1. is the white wine the cooking wine?

    1. In this case it's just regular white wine. The cooking one is a little more potent and would require less. Hope that helps. :)

  2. Just made the soup…THANK YOU so much!!! Your detailed step-by-step instructions saved me!
