Artist Point: Berry Cobbler


3 cups all-purpose flour
1/4 tablespoon salt
2  1/2 tablespoons baking powder
1 stick unsalted butter, diced
1  1/8 cup granulated sugar
2 eggs
1 cup heavy cream or whole milk
non-stick cooking spray


2 cups blueberries or other seasonal berries
1/2 cup brown sugar
1 stick unsalted butter, diced
whipped cream or ice cream (optional)


      Preheat oven to 350 degrees.

     In a large mixing bowl, combine the flour, salt, baking powder and granulated sugar. Mix in the diced butter. Add the eggs and stir until just absorbed. Pour in the heavy cream (or milk) and mix just enough to incorporate the ingredients (batter will be thick and lumpy).

    Spray a 9x13" baking dish with non-stick cooking spray. Spoon the batter into the dish and spread evenly. Top with the berries. Sprinkle with 1/2 cup brown sugar and dot with the diced butter.

    Bake in preheated 350° oven for 50 minutes, or until a toothpick inserted in center comes out clean and dry. The cobbler will be golden brown. Cool at room temperature. Serve topped with more fresh berries and a dollop of whipped cream or scoop of vanilla ice cream. Enjoy!
