Whispering Canyon Cafe: Strawberry-Banana Bread
*makes 2 loaves


2 sticks butter, softened
2 cups sugar
6 medium bananas, peeled and mashed
14 ounces, frozen sliced strawberries, thawed
4 eggs
1 teaspoon salt
2 teaspoons baking soda
3 cups all-purpose flour


   Preheat oven to 325-degrees. Grease and flour two loaf pans. In a large mixing bowl, place softened butter and sugar then cream using an electric mixer. Add the mashed bananas and mix well, scraping the sides of bowl with spatula occasionally. Add the eggs, one at a time, mixing well after each. Set bowl aside.

   In a separate bowl, mix the salt, baking soda and flour. Add this flour mixture to the banana mixture and stir until well blended together. Stir in the thawed strawberries. Pour the batter into the prepared loaf pans and bake for 65 - 70 minutes or until toothpick inserted in center comes out clean. Let cool in pans at least 30 minutes then invert carefully onto serving plates.
