Sci-Fi Dine-In Theater: Mac & Cheese Recipe

Sci-Fi Dine-In Theater: Mac & Cheese
*Serves 4 - 6


3 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 cups milk
10 slices orange American cheese
1 teaspoon yellow mustard
3 cups rotini pasta
1 1/2 cups cheddar cheese, grated
Salt and Pepper, to taste


   In a large saucepan, melt butter on medium. Add flour and cook 5 minutes, stirring constantly until it forms a roux. Heat milk in microwave just until hot then slowly whisk it into the roux. Simmer 10 minutes until thickened, stirring constantly. Add sliced cheese and yellow mustard. Blend well until cheese has melted. Do not boil. Season with salt and pepper.

  In a separate pot, cook pasta according to package directions. Drain well and rinse under cold water. Mix cooked pasta with cheese sauce, stirring well to coat. Pour into a casserole baking dish and sprinkle top with remaining grated cheddar cheese. Broil in oven until cheese melts and top is lightly browned. Serve hot and eat while watching your favorite Disney movie! 


  1. My mom used to have this recipe in one of the Disney recipe books. I'd made it several times in the past and could swear that instead of Velveeta it called for American cheese slices to be melted into the roux.

    Anyone happen to know the number of slices? Pretty sure it was in one of the Cooking with Mickey - Most Requested Recipes from Walt Disney World books.

    This was my favourite classic mac & cheese recipe of all time!

  2. NEVER RINSE YOUR PASTA. You are washing out the flavor and rinsing out the starch needed to help the sauce stick.

  3. I had this in the Disney cookbook years ago. Still the most soid mac & cheese recipe to date. So good!
