Boma (Animal Kingdom Lodge): Chicken Corn Chowder Recipe

Boma (Animal Kingdom Lodge): Chicken Corn Chowder
*Serves 4


2 boneless, skinless chicken breasts, cooked and cubed
2 large Russet potatoes, baked and cubed
2 cups frozen corn kernels
2 (15 ounce) cans chicken broth
1 cup heavy cream
1 cup milk
1 chicken bouillon cube
1 tablespoon sugar
1/2 onion, diced
1 red bell pepper, diced
2 tablespoons Frank's Red Hot Sauce
3 tablespoons parsley, fresh chopped or dried


   In a large stock pot, bring chicken broth to a boil. Reduce heat and add milk, heavy cream, chicken, potatoes, peppers, onion, corn, bouillon cube and sugar. Simmer 40 minutes on medium-low. Add in hot sauce and parsley. Simmer on low another 5 minutes. Serve hot with bread for dipping.
